Mother’s Day breakfast and brunch recipe ideas
Here are some of my favorite recipes for a special breakfast or brunch for Mother’s day. I’m including some savory brunch ideas, as well as sweet treats and drinks to celebrate with our amazing moms.
Savory breakfast and brunch recipes:

Savory cassava cheese bread waffles: These cheesy gluten free waffles are inspired by “pan de yuca” and are made with cheese, cassava or tapioca starch, eggs, and butter. Serve with toppings like mashed avocado, fried egg, chorizo or smoked salmon or bacon, tomato, etc.

Garbanzos with chorizo and chimichurri: Easy recipe for sauteed garbanzos or chickpeas with chorizo and chimichurri sauce. This delicious dish can be served alone or topped with fried or poached eggs.

Hominy corn scrambled eggs {Ecuadorian mote pillo}: This satisfying breakfast dish consists of hominy sautéed with onions, garlic, achiote, eggs, milk, chives and cilantro or parsley, and served with hot black coffee and slices of fresh cheese.

Shakshuka: This dish consists of eggs cooked or poached in thick sauce of tomato, onions, peppers, and spices. This variation adds chorizo or merguez sausage.

Chorizo and ripe plantain hash {Picadillo de chorizo y plátanos maduros}: This picadillo style breakfast hash is made with fresh chorizo, sweet plantains, onions, and served with eggs, queso fresco, avocado and hot sauce.

Baked Spanish tortilla with ham: Easy recipe to prepare a homemade baked Spanish tortilla with ham. This baked tortilla style omelette is made with potatoes, eggs, onions, ham, garlic, and jalapeños (or bell peppers)

Green plantain patties stuffed with cheese {Tortillas de verde}: Recipe for Ecuadorian green plantain patties stuffed with cheese, also known as tortillas de verde, made with a dough of green plantains, a cheese filling, and cooked on a griddle or frying pan.

Bloody Mary Shrimp Ceviche: This Bloody Mary shrimp ceviche recipe is made with fresh tomato juice, orange juice, lime juice, Tabasco hot sauce, shrimp, red onions, tomatoes, cilantro, and vodka to taste. Use tequila for a Bloody Maria, or leave out the alcohol for a refreshing savory mocktail with ceviche flavor.
Sweet treats for breakfast and brunch:

Homemade sweet crepes: Our easy recipe for making sweet homemade French crepes, the batter is made with flour, sugar, eggs, milk, vanilla, and butter or oil. Serve with your choice of fresh fruit like berries, banana, mango, or with Nutella, dulce de leche, strawberry sauce, honey, etc.

Tropical fruit salad: This Ecuadorian and Latin American style tropical fruit salad, called come y bebe in Ecuador, is made with a mix of tropical fruits including papaya, bananas, pineapple, and oranges.

Rhubarb strawberry tart: This simple rhubarb strawberry tart can be prepared as classic fruit tart or as a rustic galette tart made with fresh rhubarb and strawberries.

Raspberry, goat cheese and almond empanadas: These raspberry, goat cheese and almond empanadas or sweet turnovers are a delicious treat for breakfast or brunch. These sweet empanadas are made with a filling of fresh raspberries, a sweet goat cheese mix with vanilla/orange zest, and sliced almonds.

Simple homemade panna cotta with berries: Panna cotta is a classic Italian dessert that is made with cream, milk, sugar, vanilla and gelatin. It’s a very easy to make dessert that can be made ahead of time. Top with fresh berries or fruit sauce.

Chocolate tres leches cake: This mouthwatering chocolate tres leches cake is topped with a creamy dulce de leche mascarpone frosting, toasted coconut, and chocolate shavings.

Strawberry raspberry gelatin hearts {with real fruit}: This easy recipe for making homemade strawberry raspberry gelatin hearts is made using fresh berries, sugar, water, and unflavored gelatin.

Passion fruit tiramisu: This tropical tiramisu recipe is made with mascarpone cream cheese, ladyfingers, eggs, sugar, rum and passion fruit.

Refreshing brunch drink ideas:

Tropical fruit smoothie: This refreshing tropical fruit smoothie is made with papaya, banana, pineapple, mango, and orange.

Fruit oatmeal drink {Colada de avena con naranjilla}: This traditional Ecuadorian fruity oatmeal drink, is made with oats, naranjilla fruit (or pineapple, passion fruit, etc) , panela or brown sugar, water and cinnamon. It can be served cold on warm days or warm during cold winter days.

Kir royal: This is one of the easiest brunch cocktails to make. A kir royal, also called kir royale, is a classic french sparkling cocktail or aperitif drink made with champagne and blackcurrant liqueur.

Champagne and strawberry ice cubes: Keep the bubbly extra chilled with these champagne and strawberry ice cubes. These adorable ice cubes can be added to bubbly/sparkling wine cocktails, white sangria, or to give an extra special touch to a glass of champagne. You can make a mocktail version with sparkling grape juice.

Melon ball sangria: This refreshing and beautiful melon moscato sangria is made with a mix of melon balls, including watermelon, cantaloupe and honeydew melons, plus moscato wine, sparkling water, mint, etc. Mocktail variation instructions are included.

Peach bellini cocktail: Simple recipe for a peach Bellini cocktail, made with fresh peach puree, prosecco or sparkling wine, and a dash of raspberry liqueur.

Watermelon mimosa: This watermelon mimosa is a colorful and refreshing twist on the traditional mimosa cocktail – it is made with watermelon, orange juice, sugar to taste, sparkling wine, and garnished with fresh mint.
