Fish and seafood recipes *with a Latin touch*

This delicious collection features some of our best fish and seafood recipes. These recipes, with a Latin touch, are easy to make and can be customized based on your preferences or the fish/seafood that you have available. I’ve included a mix of fish and seafood recipes that include appetizers, salads, soups, rice and pasta dishes, and main entrees – grilled/seared/cooked in sauces. Enjoy!

Grilled fish with seafood sauce: Recipe for grilled fish with seafood sauce, prepared with grilled cod (can also use halibut or tilapia) topped with a creamy garlic seafood sauce made with shrimp, calamari, scallops, garlic, onion, white wine and cream.

Avocados stuffed with tuna salad: Recipe for avocados stuffed with tuna salad made with peas, corn, carrots, hardboiled egg, tomato, parsley, and salsa rosada.

Rice with shrimp {Arroz con camarones}: This shrimp rice dish, called arroz con camarones in Spanish, is a traditional Ecuadorian and Latin dish from the coastal areas consisting of rice cooked in a shrimp broth and mixed with shrimp, sautéed onions, peppers, tomatoes, garlic, cumin, achiote and parsley.

Fish with coconut sauce {Pescado encocado}: Pescado encocado is a coastal dish of fish seasoned with citrus and spices and then cooked in a sauce of cilantro, onions, tomatoes, bell peppers and coconut milk.

Shrimp stuffed avocado {Aguacate relleno con camarones}: Delicious recipe for shrimp stuffed avocado made with ripe avocado filled with shrimp, red onion, radish, bell pepper, celery and cilantro aioli salad.

Grilled salmon with avocado salsa {Salmon a la parrilla con salsa de aguacate}: Recipe for grilled salmon with avocado salsa, the fish is seasoned with coriander, cumin, paprika, onion powder and pepper, and topped with avocado salsa.

Fish ceviche {Ceviche de pescado}: My brother Ramon’s fish ceviche recipe (ceviche de pescado), made with fish “cooked” in lime juice with hot peppers and garlic, and then mixed with red onions (or shallots), tomatoes, bell peppers, and cilantro.

Grilled tuna skewers with salsa verde {Pinchos de atún con salsa verde}: Recipe for grilled tuna skewers with salsa verde or anchovy herb sauce. The tuna skewers or kebabs are marinated with cumin, paprika, lemon pepper, garlic powder, dried oregano.

Seafood rice {Arroz marinero – Arroz con mariscos}: Arroz marinero or seafood rice is a Latin/South American dish similar to Spanish paella, that is made with rice cooked in seafood broth and sautéed with shrimp, clams, squid, bay scallops, onions, garlic, bell pepper, cilantro and spices.

Traditional food from my hometown at @mamalolarestaurante in Loja, Ecuador:

1. Horchata lojana - a delicious sweet tea made with a mix of herbs and flowers 

2. Salsa de ají de pepa y mayonesa de cilantro - A mildly spicy pumpkin seed salsa and a cilantro mayonnaise served with popcorn (canguil) and hominy corn (mote) as an appetizer 

3 & 5. Cecina - a thinly sliced cut of seasoned meat, traditionally pork, but this restaurant also has a variation with chicken. Served with pickled onions (curtido) and boiled yuca.

4. Cuy - Guinea pig, not everyone’s cup of tea, I love the seasoning but find it a bit gamey/overpowering so I usually just have a small taste. My favorite part are the potatoes they served with it
