Cucumber Lime Mint Agua Fresca Cooler

This Cucumber Lime Mint Agua Fresca Cooler is a bright, refreshing mocktail that captures the essence of summer with cooling cucumber, zesty lime, and fresh mint. This non-alcoholic drink is perfect for family gatherings, summer cookouts, or a rejuvenating afternoon treat.

‘Agua Fresca’ is a light refreshing, usually fruity or citrusy, drink that is popular in Mexico and translates as fresh water. We also call it a ‘refresco’ in other Latin American countries. Cucumber agua fresca (Agua de Pepino) is known to be one of the best thirst-quenching drinks. This version adds a few touches to make it extra special, by adding fresh mint and honey plus the cucumber ribbon garnishes, it feels like a fancy mocktail.
I love an ice-cold drink on a warm day. This summer has been exceptionally hot and we’ve had so many days where I could live off this type of refreshing cucumber agua fresca cooler. When my kids were little, they used to love it when I made them cold fruity drinks. They would usually request that I make it a ‘fancy’ drink, which basically meant adding a slice of lime or fruit on the side of the glass or some fresh mint leaves.

You make the main cucumber lime mint mix ahead of time and just add cold water when ready to serve it. For a spritzer mocktail or nojito variation, use sparkling water instead of flat water.
Ingredient Notes and Substitutions
- Cucumber: Any type of cucumber will work for this recipe, especially since we will be straining the blended mix to remove any seeds. You can also use extra cucumber to make cucumber ribbons (using a vegetable peeler or mandoline slicer) to garnish the glasses.
- Fresh limes: The lime juice adds a refreshing citrus kick to the drink. In addition to the lime juice, you can also use extra lime slices for garnishing. You can also use lemons if you don’t have limes available.
- Honey: Feel free to adjust the amount of honey to your personal taste. You can also use agave nectar, simple syrup or regular sugar if you do not have honey or prefer a vegan variation.
- Mint leaves: Fresh mint leaves are the best option, however you can also use a chilled mint herbal tea instead of the water to give it that minty flavor if you are out of fresh mint. Other herbs you can use as substitutes include lemon verbena, lemon balm, and even basil.
- Water: You can use flat cold water or sparkling water for a spritzer variation.
- Ice: Use ice for serving the drink in individual glasses or add some to a pitcher, if you have time you can even make your own ice cubes with slices of lime or cucumber in them.

Frequently Asked Questions
Can I make this cucumber lime mint cooler ahead of time?
Yes, you can prepare the blended cucumber mixture up to 24 hours in advance and store it in the refrigerator. For best flavor and freshness, add the remaining water or sparkling water, ice, and garnishes just before serving.
Do I have to strain the mixture?
Straining is optional but recommended if you prefer a smoother, more refined drink. If you enjoy a slightly thicker, more fiber-rich texture, you can skip straining and serve it as is.

Can I use bottled lime juice instead of fresh?
Fresh lime juice is highly recommended for the best flavor, as it provides a brighter, more vibrant taste. Bottled lime juice can be used in a pinch, but the flavor may be slightly muted or more acidic.
What can I use instead of honey?
You can substitute agave syrup or maple syrup for a vegan-friendly option. Start with the same amount and adjust to taste depending on your preferred level of sweetness.
Can I make this drink sparkling?
Yes, using sparkling water instead of still water adds a light, refreshing fizz that enhances the overall experience. Add it just before serving to maintain the carbonation.

How do I adjust the sweetness?
Taste the blended mixture before adding the remaining water and adjust the sweetener as needed. If your cucumber is particularly mild or your limes are very tart, you may want to add a bit more honey or sweetener.
What if I don’t have fresh mint?
You can substitute the fresh mint with chilled mint herbal tea for a subtle mint flavor or omit it entirely for a cucumber-lime drink that is still refreshing and balanced.
How long does this drink last in the refrigerator?
The prepared cucumber base will keep for up to 24 hours in the refrigerator. After that, the flavor may be dull and the color may change slightly. For best results, enjoy it the same day.
Can I make this for a larger group?
Yes, this recipe scales easily. Simply double or triple the ingredients and adjust to taste. Blend in batches if needed and combine in a large pitcher.
