Recipe for a refreshing Cucumber Lime Agua Fresca, this non-alcoholic drink is made with cucumber, lime juice, mint leaves, honey or agave, water and ice.

Ingredients
1medium cucumberpeeled and chopped
3-4tablespoonsfresh lime juice, from about 2 limesadd more if you want it extra citrusy
2tablespoonshoneyor agave for vegan option
1handful fresh mint leavesplus more for garnish
2cupscold water or sparkling water480 ml
To serve and garnish:

Lime slices and cucumber ribbons or wheels
Instructions
Add the chopped cucumber, lime juice, honey, and mint leaves to a blender with ¼ cup of the water.
Blend until smooth.
For a smoother drink, strain the mixture through a fine mesh sieve into a pitcher or large jar.
At this point, you can chill the concentrate until ready to use. For best results, let it chill a minimum of 30 minutes, but no longer than 24 hours.
Stir in the remaining cold water or sparkling water.
To serve, fill tall glasses with ice, pour the cooler over the top, and garnish with fresh mint, a lime wheel, and a cucumber ribbon or slices.
Notes
To make ahead, prepare the cooler up to 24 hours in advance and store in the refrigerator. Add water, ice, and garnishes just before serving.
Use agave syrup or maple syrup (or regular sugar) instead of honey for a vegan-friendly version.
Sparkling water adds a bubbly twist that makes this drink feel extra special and gives it that summer spritzer touch.
No fresh mint? Use a chilled mint herbal tea instead of water or leave it out for a simpler flavor.
