Raspberry Lemon Tartlets

These Raspberry Lemon Tartlets are bright, elegant, and just the right amount of sweet and tangy! They look like something you’d pick up from a bakery, but they’re surprisingly simple to make at home. Perfect for spring gatherings or anytime you want a dessert that feels a little fancy without the extra effort.

I’m always drawn to desserts that look impressive but don’t actually require a ton of work, and these tartlets are exactly that! The buttery crust comes together easily, and once they’re baked, it’s just a matter of filling and assembling. It’s basically my favorite kind of baking.
I’ve made these for everything from casual get-togethers to holidays like Mother’s Day and Easter, and they are always a hit! They’re fresh, a little fancy, and honestly just really fun to serve (and eat).
Why You’ll Love These Mini Raspberry Tarts
- They look fancy, but are secretly easy. These raspberry tarts have that bakery-style look, but the process is straightforward and beginner-friendly. Once the shells are baked, assembly takes just minutes!
- Perfect balance of flavors The sweetness of the raspberry jam pairs beautifully with the bright, tangy lemon curd. Every bite is layered, fresh, and not overly sweet.
- Great for entertaining! Their mini size makes them ideal for parties, brunches, or dessert tables. They’re easy to grab, serve, and portion without any slicing.
- Make-ahead friendly. You can prep the tart shells in advance and assemble closer to serving time. This makes them perfect for stress-free hosting.
- Seasonal and versatile. These feel especially perfect for spring and summer, but you can easily adapt them year-round with different fruits or fillings.

Ingredient Notes
- Butter: Provides richness and creates that tender, shortbread-like crust. Make sure it’s softened for easy mixing!
- Powdered sugar: Sweetens the crust while keeping it soft and delicate in texture.
- Salt: Balances the sweetness and enhances the overall flavor.
- Egg yolks + cold water: Adds richness and helps bring the dough together smoothly.
- Flour: The base of the tart shells! Be careful not to overmix for the best texture.
- Seedless raspberry jam: Adds a sweet, fruity layer without any seeds for a smoother bite.
- Lemon curd: Bright, tangy, and creamy! I recommend using store-bought for ease, but you can use homemade if you prefer!
- Fresh raspberries: A fresh, juicy topping!
- Powdered sugar (optional): For a light, pretty dusting just before serving your lemon raspberry tartlets!

Variations & Substitutions
- Swap raspberry jam for strawberry, blackberry, or apricot for a different flavor profile.
- Use lime curd or orange curd instead of lemon for a citrus twist.
- Try a graham cracker crust instead of the traditional tart shell for a shortcut version.
- Top with mixed berries instead of a single raspberry for a more colorful presentation!

Tips for Success
- Don’t overmix the dough! Mix just until the flour is incorporated to keep the crust tender. Overmixing can lead to a tougher texture instead of that soft, delicate bite you want.
- Press the dough evenly into the pans. Take your time pressing the dough into each tart mold so the thickness is even throughout. This helps them bake uniformly and prevents overly thick or thin spots.
- Watch the tart shells closely while baking. Since they’re small, they can go from perfectly golden to overbaked quickly. Keep an eye on them toward the end of the baking time.
- Let the shells cool completely before filling! Filling warm shells can cause the jam and curd to melt or become runny. Fully cooled shells will give you clean, defined layers.

Storage Suggestions
Store assembled lemon raspberry tarts in an airtight container in the refrigerator for up to 2 to 3 days. For the best texture, you can also store the tart shells separately at room temperature and fill them just before serving.
The tart shells can be made ahead and frozen for up to 1 month, just thaw at room temperature before filling. Once assembled, freezing isn’t recommended, as the texture of the curd and fresh raspberries can change.

Raspberry Lemon Tartlets FAQs
Do I need mini tart pans for this recipe?
Mini tart pans make shaping and serving easier, but you can also use a mini muffin tin in a pinch. Just be sure to grease it well for easy removal. Alternatively, you can buy mini frozen tart shells in some stores!
How do I keep the tartlets from getting soggy?
Make sure the shells are fully cooled before adding the fillings. You can also add the jam layer first, which helps create a slight barrier before adding the lemon curd.
Can I make these gluten-free?
Yes, you can substitute a 1:1 gluten-free flour blend for the all-purpose flour. Just make sure it’s a blend designed for baking for the best results.
