Avocado sauce or salsa
Easy recipe for a creamy avocado sauce or salsa made with ripe avocados, lime juice, cilantro, spicy or mild chili peppers, garlic, olive oil, and cumin (optional). This sauce is a perfect dipping sauce for corn chips, plantain chips, empanadas, etc.

I originally made this creamy avocado sauce specifically to serve with these chorizo & cheese filled empanadas. I wanted the flavors of guacamole but wanted something easier to pair with empanadas than the traditional chunkier guacamole.

This avocado sauce is perfectly smooth, refreshing and spicy. It turned out to be a great sauce not just for empanadas, but also for corn chips or plantain chips. You can also serve it as a topping sauce for grilled meat, chicken or seafood. I also love using it as a replacement for mayonnaise on sandwiches and even as a salad dressing.

This avocado salsa is very easy to make: just put all the ingredients in the blender. Of course, it helps to chop and crush the ingredients a little before. This will minimize the number of the times you have to shake up the blender before pulsing again (and again).

I also wanted to make the sauce ahead of time and not worry about it darkening or losing its bright green color. To prevent it from darkening I added both lime juice, but also olive oil which really helps keep it nice and green. You can also use avocado oil (if you want it completely neutral).

You can adjust the heat level based on your preference. My family – kids included- has a decent tolerance for spice; however, you can also make this sauce very mild by using jalapeños – removing the veins and seeds help reduce the spiciness. For a spicier version use Serrano peppers or Habaneros. The best way to find the right heat level is to start by start by blending the sauce using only the chunks of chili pepper without the seeds/veins, taste and if needs more heat, then add back (little by little) some of seeds/veins until you hit the perfect spot.


Avocado sauce (Avocado salsa)
Ingredients
- 2 ripe avocados
- The juice of 2 small limes adjust to taste
- 1 medium sized bunch of cilantro roughly chopped
- 2-3 jalapeños or Serrano peppers seeds and veins removed for mild version (use green bell pepper for a non-spicy version)
- 3-4 garlic cloves crushed – adjust to taste
- 1/4 cup olive oil – or avocado oil for a neutral flavor
- 1 teaspoon ground cumin – optional adjust to taste
- Salt to taste
Instructions
- Combine all the ingredients in a blender; it helps the blending process if the avocados are in small chunks and the cilantro is lightly chopped. I also recommend crushing the garlic before putting it in the blender to ensure no one gets a surprise large piece of garlic.

- Blend until you have a smooth sauce. Use immediately or refrigerate until ready to use.
