I grew up loving bold flavors, I grew up in Ecuador, but my mom grew up in New Mexico and was always cooking dishes with Mexican inspired flavors. Storage Suggestions

Store any leftover taquitos in an airtight container in the refrigerator for up to 3 days. Reheat them in the air fryer at 350°F for a few minutes to bring back that crispiness. Avoid the microwave if you can, since it softens the tortillas.

To freeze, assemble the taquitos and freeze them before cooking. Once frozen, transfer to a bag and air fry straight from frozen, adding a few extra minutes to the cook time.

Ingredients

  • Spread 2–3 tablespoons of chicken filling in a line across the lower third of each tortilla. Roll tightly and place seam-side down.
