These easy Chicken Taquitos or Flautas de Pollo are made with rolled tortillas filled with shredded chicken, a mix of cheeses, and spices, then cooked in the air fryer until crispy.

Ingredients
For the cheesy chicken filling:
2cupsshredded chickenyou can use leftover rotisserie chicken or leftover roasted/grilled chicken
4ozcream cheesesoftened
½cupshredded Monterey Jack cheese – you can use mozzarella as a substitute or pepper jack cheese for an extra spicy variation
¼cupshredded cheddar cheese
2tablespoonsenchilada saucehomemade or storebought
1tablespoontaco seasoning
½teaspoongarlic powder
2tablespoonsfinely diced mild green chilesoptional
For rolling and assembling the taquitos:
8small 6-inch flour tortillas - you can also use corn tortillas
In a large bowl, combine the shredded chicken, cream cheese, Monterey Jack, cheddar, enchilada sauce, taco seasoning, garlic powder, and green chiles (if using).
Mix all the ingredients together until they are evenly combined and you have a creamy mixture.
Microwave the tortillas for 10–15 seconds to make them pliable and prevent cracking.
Spread 2–3 tablespoons of chicken filling in a line across the lower third of each tortilla. Roll tightly and place seam-side down.
Repeat the process with all the tortillas.
Lightly spray the taquitos with olive oil or avocado oil spray. Arrange in a single layer in the air fryer basket. Air fry at 375°F for 8–10 minutes, flipping halfway through, until golden and crispy. Cook them in batches if needed.
Let cool slightly before serving.
Serve with chopped cilantro, lime wedges, red or green salsa (or both), Mexican crema or sour cream, guacamole or avocado salsa.
