  • 3 cups seedless watermelon diced small
  • ½ cup crumbled feta
  • ½ cup finely diced cucumber
  • 2 tablespoons finely diced red onion rinse with cold water to remove bitterness
  • 1-2 tablespoons chopped fresh mint
  • 1 tablespoon olive oil adjust to taste, optional
  • 1 lime or lemon
  • 2 tablespoons chopped toasted pistachio

To finish:

  • 1-2 teaspoons hot honey or regular honey
