Cranberry Cheesecake Bars

These Cranberry Cheesecake Bars have a buttery graham cracker crust, a silky white chocolate cheesecake filling and gorgeous swirls of tart homemade cranberry sauce on top. They’re sweet, tangy, creamy and almost too pretty to eat (almost).
After many years of celebrating Thanksgiving in the US, cranberries have become one of my favorite holiday ingredients. They are a quintessential holiday flavor!

I love that these bars can be made a day ahead, which means one less thing to worry about on a busy holiday. They’re a little more festive than a classic cheesecake, and cutting them into bars makes them so easy to serve to a crowd. If you’re planning your holiday menu, you’ll find plenty more ideas in my Thanksgiving recipe collection.

Why You’ll Love This Recipe
- Sweet and tart in every bite. The tangy cranberry swirl balances the rich, sweet white chocolate filling perfectly. Neither one overpowers the other.
- Easier than a classic cheesecake. There’s no springform pan and no water bath required. A simple 9×9 baking dish lined with parchment does the job.
- Make-ahead friendly. These cranberry cheesecake bars actually need to chill for at least 4 hours, so they’re ideal to make the day before your gathering. That means less stress on the big day.
- So pretty on the table. The bright red cranberry ribbons look stunning against the creamy white filling. Everyone will think you picked them up at a bakery.
- Perfect for the holidays. They’re festive enough for Thanksgiving, Christmas and New Year’s Eve. They also travel well for potlucks and cookie exchanges.

Ingredient Notes
For the cranberry swirl:
- Cranberries: Fresh or frozen both work, and there’s no need to thaw frozen ones first. They cook down into a bright, tart sauce.
- Granulated sugar: Sweetens the cranberries just enough while keeping their tangy flavor.
- Water: Helps the cranberries cook down and burst.
For the graham cracker crust:
- Graham cracker crumbs: Use store-bought crumbs or pulse whole graham crackers in a food processor until finely ground.
- Granulated sugar: Adds a little sweetness and helps the crust hold together.
- Unsalted butter: Melted butter binds the crumbs into a crisp, sturdy crust.
For the white chocolate cheesecake filling:
- White chocolate: Use a good-quality bar or chips that list cocoa butter in the ingredients. It adds sweetness and a creamy, vanilla-like flavor.
- Heavy cream: Helps the white chocolate melt smoothly without seizing.
- Cream cheese: Use full-fat blocks, softened to room temperature, for a smooth, lump-free filling.
- Granulated sugar: Sweetens the filling. The white chocolate adds sweetness too, so you don’t need much.
- Eggs: Set the filling and give it that classic creamy cheesecake texture. Room temperature eggs blend in more smoothly.
- Sour cream: Adds a subtle tang and extra creaminess. Make sure it’s at room temperature as well.
- Vanilla extract: Rounds out the flavor of the white chocolate filling.

Variations & Substitutions
- Leftover cranberry sauce: Use about 3/4 cup of smooth homemade or canned cranberry sauce in place of the swirl.
- Other berries: Swap the cranberries for raspberries or blackberries, and strain out the seeds after blending.
- Gingersnap or Biscoff crust: Replace the graham crackers with crushed gingersnaps or Biscoff cookies for a spiced, festive crust.
- Plain cheesecake: Leave out the white chocolate and cream, and add an extra 1/4 cup sugar to the filling.
- Greek yogurt: Use full-fat plain Greek yogurt instead of sour cream.
- Gluten-free: Use gluten-free graham crackers or gluten-free cookies for the crust. The filling is naturally gluten-free.
Tips for Success
- Bring everything to room temperature. Softened cream cheese, room temperature eggs and room temperature sour cream blend together smoothly without lumps.
- Cool the cranberry sauce completely. Warm sauce is runnier and can sink into the filling instead of creating pretty swirls. It also thickens as it cools, which helps it hold those distinct ribbons.
- Don’t overmix the filling. Beat on low speed once the eggs go in, and mix just until everything is smooth. Too much air in the batter can cause the cheesecake to puff up and crack as it bakes.
- Cool slowly and chill overnight. Letting the bars rest in the turned-off oven with the door cracked helps prevent cracks from sudden temperature changes.

Serving Suggestions
Serve these cranberry cheesecake bars chilled, straight from the fridge, with a dollop of whipped cream, a few sugared cranberries or a little orange zest on top.
They’re the perfect sweet ending to a holiday feast after my Lemon and thyme roasted turkey, and they pair beautifully with a festive Cranberry pisco sour for the grown-ups.

Storage Suggestions
- Refrigerator: Store the bars in an airtight container or tightly covered with plastic wrap for up to 5 days.
- Freezer: Wrap individual bars in plastic wrap, then place them in a freezer-safe container or bag for up to 3 months. Thaw overnight in the refrigerator before serving.

Frequently Asked Questions
Why did my cheesecake bars crack?
Cracks usually happen when the batter is overmixed or the bars cool too quickly. Beat the filling on low speed once the eggs go in, and let the bars cool gradually in the turned-off oven with the door cracked.
How do I know when the cheesecake bars are done?
The edges should look set while the center still has a slight jiggle when you gently shake the pan. The center will continue to firm up as the bars cool and chill.
How do I get clean slices?
Chill the bars thoroughly, preferably overnight, and lift them out of the pan using the parchment overhang. Use a sharp knife dipped in hot water and wiped clean between each cut.

Cranberry Cheesecake Bars

- 1 ½ cups fresh or frozen cranberries 150 grams
- 1/3 cup granulated sugar 70 grams
- ¼ cup water 60 ml
For the graham cracker crust:
- 1 ½ cups graham cracker crumbs 170 grams
- ¼ cup granulated sugar 50 grams
- 6 tablespoons unsalted butter, melted 85 grams
For the white chocolate cheesecake filling:
- 8 oz white chocolate, in chips or finely chopped 225 grams
- ¼ cup heavy cream 60 ml
- 16 oz cream cheese, softened 450 grams
- ½ cup granulated sugar 100 grams
- 2 large eggs room temperature
- ½ cup sour cream, room temperature 120 ml
- 1 teaspoon vanilla extract
Instructions
For the cranberry swirl:
- In a small saucepan over medium heat, combine the cranberries, sugar, and water.

- Cook, stirring occasionally, until the cranberries burst and the mixture thickens, about 8–10 minutes.

- Blend the cranberries in a food processor until mostly smooth. Set aside to cool completely. The cranberry sauce will continue to thicken as it cools.

For the graham cracker crust:
- Preheat the oven to 325°F (160°C). Line a 9×9-inch baking dish with parchment paper, leaving some overhang for easy removal.
- In a medium bowl, combine the graham cracker crumbs and sugar. Pour in the melted butter and stir until the crumbs are evenly coated.

- Press the mixture firmly and evenly into the bottom of the prepared baking dish.

- Bake for 8–10 minutes. Remove from the oven and set aside while preparing the cheesecake filling.
For the white chocolate cheesecake filling:
- Place the chopped white chocolate and heavy cream in a microwave safe bowl.

- Microwave in 20 second intervals, stirring between each, until the chocolate is completely melted and smooth. Set aside to cool slightly.

- In a large mixing bowl with a hand mixer, beat the softened cream cheese and sugar until smooth and creamy.

- Add the sour cream, vanilla, and eggs. Mix until smooth.

- Pour in the melted white chocolate mixture and mix on low speed until fully combined.

To assemble and bake the cranberry cheesecake bars:
- Pour the white chocolate cheesecake filling evenly over the prepared crust and smooth the top.

- Drop small spoonfuls of the cranberry sauce over the cheesecake filling, spacing them evenly across the top.

- Use a butter knife or skewer to gently swirl the cranberry sauce through the cheesecake. Avoid swirling too much so that you still have distinct ribbons of cranberry.

- Bake for 40–45 minutes, or until the edges are set and the center still has a slight jiggle.
- Turn off the oven and crack the oven door. Let the cheesecake bars sit in the oven for 15 minutes.
- Remove from the oven and allow the cheesecake bars to cool completely at room temperature.

- Cover and refrigerate for at least 4 hours, or preferably overnight, before slicing.
- Cut into 9 bars and serve chilled.
