Garden salad with lime cilantro dressing {Ensalada mixta}

This delicious and refreshing garden salad recipe is made with lettuce, tomato, onion and avocado with a lime cilantro dressing.

If my kitchen was a restaurant this simple garden salad would be the house salad. This is the everyday salad that we have at least a few times a week. It is also the same salad that both my mother and grandmother will make if you are having a regular meal at their home. Sometimes other veggies such as radishes, cucumbers, carrots or others are added, but you could say that the base is lettuce, tomatoes, onions and avocado with a lime cilantro dressing.

This tomato, avocado, onion and lettuce salad is one of those refreshing yummy salads that taste great and make you feel good. My kids love it and I think it is because of the lime dressing, they aren’t as enthusiastic about salads with vinegar based dressings, but they constantly ask for seconds when I make this garden salad, which makes me think that as long as I put lime juice on their food they will eat it.

Servings: 6 to 8 as a starter or side salad.

Ingredients

  • 1 head of lettuce washed and leaves cut or torn into large pieces
  • 2 tomatoes sliced or quartered
  • ½ red onion thinly sliced
  • 1 avocado sliced or diced
  • 1 tbs finely chopped cilantro
  • Juice of 2 limes
  • 2 tbs olive oil
  • Salt and pepper to taste

Instructions

  • To make the dressing whisk the chopped cilantro, lime juice, olive oil, salt and pepper together.
  • Combine the lettuce, tomatoes, onions and avocado in a large bowl.
  • Toss the salad with the dressing and serve.

Notes

Add slices of grilled chicken or meat, or leftover salmon/shrimp to make this full entree style salad.

    This was amazing! I typically don’t even comment but I’ve made this salad two days in a row now and sooo good! I’ll be making this a lot this summer. I’m addicted to salsa and guac which this has all the ingredients plus lettuce.

I found the picture on Pinterest, and blindly pinned without checking it out first, and (GASP) the link was to a different page that didn’t have the recipe.     i tried this salad and it was absolutely delicious, i took it to my collegues at work and they loved it, not a drop was left! i will be making again tommorrow for my friends and am sure it will be another thumbs up!

    Hi Paz – Use a sharp knife – my favorite one for onions is actually a tomato knife, it is small and has a nice super sharp blade, you can get one at Amazon.com for under $10 or for a little bit more at William’s Sonoma -, I also remember that when I was learning I would do it very slowly to get each slice as thin as possible; or if you have a mandolin it does all the work for you- I have a cheap plastic one that works well, it also helps with a lot of other different cuts, but it is a pain to clean so I only use it when I cutting/slicing a lot of things. I also took a knife skills class a few months ago, it was very useful, especially learning how to use chef knifes (I still need to get one of those,) also I learned I was holding the knife the wrong way and doing everything backwards.

      I use a mandolin, but one has to be REALLY careful…….
