Ecuadorian plantain recipes

Here are some of my favorite Ecuadorian plantain recipes, this list is an ongoing project and I will be adding more recipes. If you have a specific Ecuadorian plantain recipe that you would like to see added please let me know in the comment section. I love plantains and while most of these recipes are good anytime of the day, my favorites are the breakfast dishes like bolon de verde, majado de verde, tigrillo, sango de verde, fried (or baked) ripe plantains with cheese, and green plantain empanadas.

Plantains are used to prepare many popular street food dishes like emborrajados and platanos asados. If you’re visiting the beaches in Ecuador, you will likely be approached by food cart vendors selling delicious bollos de pescado, corviches, envueltos, and other plantain specialties. Many Ecuadorian soups use plantains, both ripe and green, as a key ingredient. In my home province of Loja, we have a couple of traditional soups, repe and arvejas con guineo, that typically use green bananas, however for those of us that can’t always find green bananas, it is easy to use green plantains instead.

  1. I live in Ecuador now and would LOVE to have the tigrillo recipe to serve for breakfast. I have eaten it in many different restaurants and all seem to be made differently.

    You are right that there are several ways to prepare (boiling the platanos, frying them or even roasting them), my recipe boils them, but also gives you the option to fry them if you also want to test that method.

    I have a request for a Cazuela de Mariscos recipe…I’m of Ecuadorian Heritage & unfortunately since we are from Cuenca, it is not a common dish served there. I have only had it in Guayaquil or made by friend from the Coast. If you could, please add that to your upcoming dishes…much love!

    Always look forward to your recipes. They take me home everytime I try one. I was hoping that you have the recipe for cazuela de pescado o de marisco it has green plantain in it. I have a rough idea of the ingredients but now sure of recipe or how to put it together. Would love to see a posting of this if you have it.
