  1. Hi, Laylita! I just wanted to thank you from my heart, for dedicating your time to publish these wonderful Ecuadorian recipes, my family and I and friends enjoy so very much! My name is Monica and I was born and raised in Guayaquil, Ecuador. However, my husband is American-born, but from Italian and Lithuanian parents. He adores Latin women and Latin food, especially, Ecuadorian. Just yesterday, We prepared Encebollado de Pescado to take it to a 4th of July party. It was the best food at the party, everyone loved it, so thanks again, for facilitating this to us who live in this country, but miss dearly our Ecuador! I would love to buy your cooking book. Is it available at this time?

  2. Hi Laylita, thanks for the wonderful website you’ve got going! It’s been so great to be able to replicate childhood recipes. I wanted to know if perhaps you know of or have a recipe for an Ecuadorian spinach soup. My mom used to make it for us when we were little and unfortunately, she passed away 3 years ago and she took all her culinary secrets with her. I now live in Australia, and my only hope for getting Ecuadorian food here is making it myself :)

    I am going to Ecuador in June. This is my first visit. I will primarily be in Quito and the north, and Cuenca and it’s surrounds. I love all kinds of foods, and cooking, and will try anything. Do you have any recommendations for me on this trip so I experience true Ecuadorian food?

      The places listed in those posts are still current, I would say in both Quito and Cuenca to visit the local mercados or markets, there are also several good (higher end, but still affordable) restaurants in Itchimbía that have great views of the city – perfect for a sunset dinner. In Quito, take a trip to the Sangolgui, they are famous for their hornado or roasted pork. Also, if you visit Cayambe, another day trip from Quito and on the way to Otavalo, try the famous bizcochos and queso de hoja at Fabrica de Bizcochos San Pedro. In Cuenca, try El Maiz and Tiesto’s, also make sure you visit Piedra de Agua (a thermal spa on the outskirts of the city – about a $5 cab ride from downtown). Also, in Cuenca (again if you like pork) go to one of local hole in the wall places that serve chancho a la barbosa (another type of roasted pork), in Cuenca also make sure you try mote pillo, caldillo de huevo, humitas, cuy or roasted guinea pig, canelazo or sangoracha to warm up. Another must see day trip in Cuenca is to Cajas National Park, you can arrange a day trip with one of the hosterias there, they’ll pick you up in downtown Cuenca. If you have time visit the beaches in Ecuador, the coastal food is so delicious, try bolon de verde, bollo de pescado, the fresh ceviches, green plantain cazuelas, encebollado, biche or viche – if you have just one beach place to visit I would say go to Puerto Lopez (and visit Machalilla park during the day). If you have more time, then also visit the northern beaches in Esmeraldas. Your question reminds me how much I miss all of this, but that I also need to put together an updated post with all the places I visited last summer.
