Easy recipe for maple mustard salmon, the salmon is marinated with maple syrup, mustard, garlic powder, paprika, rosemary and olive oil and roasted in the oven.

1large salmon filletabout 12 oz or 350 grams
1 ½tbsppure maple syrupkeeps glaze savory
1tbspsmooth Dijon mustardadd 1 extra teaspoon whole-grain mustard
1tspgrainy mustardmoutarde a la ancienne
1tspolive oil
1tspfresh rosemaryfinely chopped
½tspgarlic powder
¼tspsmoked paprika
Salt and freshly cracked black pepper
Lemon wedgesfor serving
Instructions
Preheat the oven to 400F (200C). Line a baking sheet pan with parchment paper.
Mix the glaze: in a small bowl, whisk together maple syrup, Dijon mustard, grainy mustard, olive oil, rosemary, garlic powder, smoked paprika, salt, and pepper.
Prepare the salmon: Place the salmon skin-side down in the pan. Pat dry, then generously spread the maple mustard mixture over the top.
Roast for 10-12 minutes, depending on thickness, until the salmon flakes easily and the glaze looks caramelized.
Optional finish: broil for 1-2 minutes if you want a lightly crusted top, just keep an eye on it.
Serve with a squeeze of lemon and your choice of side dishes
Notes
If your oven runs hot, pull the salmon out of the oven a minute early, it will keep cooking a bit once it’s out.
