1medium sized cauliflowerwashed and cut into florets
Spicy shallot vinaigrette:
2garlic cloves
1Anaheim pepper
1jalapeño or red fresno chilior Serrano peppers, adjust to taste – remove seeds/veins for less heat
2medium shallots
Juice from 1 lime
1tbschampagne vinegarcan also use apple cider vinegar
2tbswater
3tbsolive oil
2tbsfinely chopped cilantro
Salt to taste
Instructions
Bring water to boil and add the cauliflower, boil for 2-3 minutes. Drain.
To make the vinaigrette combine the garlic, Anaheim pepper, jalapeño, shallots, lime juice, vinegar, water and olive oil in a mini food processor and pulse until all the ingredients are finely minced.
Toss the cauliflower with the vinaigrette and salt to taste. Can be served immediately or chilled until ready to serve.
Sprinkled with the chopped cilantro right before serving.
