Ingredients

cups
of boiled and diced potatoes
about 4-5 medium sized potatoes
2 ½
cups
cooked shrimp
about 1 lb

cups
boiled and diced carrots
about 6-7 medium sized carrots

mayonnaise

tbs
finely chopped white onion
2
garlic cloves
, crushed - optional and feel free to adjust to your taste
Salt to taste
1-2
tbs
finely minced parsley
Optional garnishes:
Lettuce leaves and sliced tomatoes
Avocado slices
Instructions
Mix all of the ingredients together.
Sprinkle parsley on top and serve with lettuce and tomato slices.
