Ingredients

cooked quinoa

cherry tomatoes
halved

diced cucumber
seeds removed

finely chopped green onions or scallions
Juice of 1 large lime

finely chopped cilantro
2
tbs
olive oil
Salt and pepper to taste
To serve:
Salad greens
Cebollas curtidas or pickled red onions
Instructions
Mix the tomatoes, cucumber, green onions, cilantro, lime juice, olive oil, salt and pepper in a bowl.
Add the cooked quinoa and mix well.
Place the quinoa salad on the salad greens and top with the curtido or pickled onions.
