Ingredients
4-5cupscooked quinoafrom about 1 ½ cups of uncooked quinoa – can also use cooked rice
For the tomatillo and cilantro sauce:
6 tomatilloswashed and quartered
1bunch of cilantrowashed and large parts of stems removed
Juice from 1 lime
2tbschopped white onion
2garlic clovescrushed
1hot pepperjalapeño or serrano - optional
Salt and pepper to taste
Instructions
Combine the tomatillos, cilantro, lime juice, chopped onions, crushed garlic, hot pepper (if using), salt and pepper to taste in a blender, mix until a smooth sauce is obtained.
Mix the sauce with the cooked quinoa, serve warm. Can also be made ahead and re-heated before serving. You can also serve as a cold side dish.
