Ingredients
2small bunches of watercresswashed and dry
1ripe but firm avocadopeeled and sliced
2orangespeeled and cut into supreme style slices
2ouncesof goat cheesecrumbled
For the orange tarragon vinaigrette:
2tablespoonsof fresh orange juice
1tablespoonof champagne vinegarcan also use white wine vinegar or apple cider vinegar
1garlic clovecrushed
3tablespoonsof olive oil
1tablespoonof fresh chopped tarragon or 1 teaspoon of dry tarragon
Salt and pepper to taste
Instructions
Mix the vinaigrette ingredients together, a good way to get the ingredients well blended is to place them in a small jar with a lid, and shake it well.
Place the watercress leaves, avocado slices, orange slices, and crumbled goat cheese in a salad bowl or on individual plates.
Pour the dressing over the salad, toss gently, and serve immediately.
