C\u2019est un des plats qu\u2019il vous faut, les jours o\u00f9 vous aurez envie d\u2019un agr\u00e9able repas maison qui non seulement vous satisfera l&rsquo;estomac, mais qui vous rendra \u00e9galement heureux de vous retrouver. Ce plat est aussi connu sous le nom de seco de gallina criolla (rago\u00fbt de poulet cr\u00e9ole). Si pr\u00e9par\u00e9 avec un poulet jeune, il est appel\u00e9 seco de pollo, et si pr\u00e9prar\u00e9 avec une poule plus \u00e2g\u00e9e, il est appel\u00e9 seco de gallina criolla. Traditionnellement, c\u2019\u00e9tait une fa\u00e7on de cuire les poules \u00e2g\u00e9es \u00e0 la chaire dure et d\u2019attendrir la viande en la cuisant lentement dans une sauce \u00e0 l\u2019oignon, \u00e0 l&rsquo;ail, aux poivrons, \u00e0 la tomate, aux herbes et \u00e9pices. La pr\u00e9paration traditionnelle n\u00e9cessite d\u2019utiliser \u00e9galement de la chicha &#8211; boisson ferment\u00e9e \u00e0 base de ma\u00efs &#8211; au lieu de bi\u00e8re, cela dit la plupart
