Les hu\u00eetres sont de d\u00e9licieux fruits de mer, plein de nutriments comme l&rsquo;iode, qui sont meilleures lorsqu\u2019elles sont consomm\u00e9es fraiches et crues. J\u2019adore manger des hu\u00eetres crues, mais \u00e7a n\u2019a pas toujours \u00e9t\u00e9 le cas. D\u2019ailleurs, je tiens \u00e0 remercier Nico pour m&rsquo;avoir appris \u00e0 appr\u00e9cier les hu\u00eetres crues. Avant de l\u2019avoir rencontr\u00e9, j\u2019aimais les hu\u00eetres soit frites (fa\u00e7on Texas) ou en ceviche (fa\u00e7on \u00e9quatorienne). J&rsquo;\u00e9tais cependant sceptique \u00e0 l\u2019id\u00e9e de les manger crues directement de la coquille.<\/p>\n<p>Les grosses hu\u00eetres du Golfe du Texas sont excellentes \u00e0 frire ou \u00e0 griller. Mais ce ne sont pas les meilleures pour une consommation crue. Mes favorites \u00e0 manger crues sont les petites hu\u00eetres, telles que les Kumamoto, les Olympia, Penn Cove, les Kushi, les Hama Hama, et d\u2019autres. <!--more--><\/p>\n<p>Les mois les plus froids sont g\u00e9n\u00e9ralement les meilleurs pour manger des hu\u00eetres crues. Ma tante m&rsquo;a dit une fois qu\u2019il fallait \u00e9viter de manger des hu\u00eetres durant un mois qui ne contient pas de \u00ab\u00a0r\u00a0\u00bb dans son nom \u2013 en l\u2019occurrence de Mai jusqu\u2019\u00e0 Ao\u00fbt. Plus il fait chaud plus il est probable que les hu\u00eetres contiennent des bact\u00e9ries nuisibles. La plupart du temps o\u00f9 vous entendez parler de personnes qui \u00a0tombent malades apr\u00e8s avoir mang\u00e9 des hu\u00eetres crues, c\u2019est pendant les mois d&rsquo;\u00e9t\u00e9. C&rsquo;est une \u00e9vidence, il ya toujours un risque pour la sant\u00e9 associ\u00e9 \u00e0 la consommation de tout fruit de mer cru. On trouver parfois de petits avertissements sur les menus des restaurants. Si vous n&rsquo;\u00eates pas s\u00fbr, demandez \u00e0 votre m\u00e9decin.<\/p>\n<h2>Comment ouvrir des hu\u00eetres sans se faire mal?<\/h2>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone\" title=\"M\u00e9thode d'ouverture des huitres\" src=\"https:\/\/www.laylita.com\/recipes\/wp-content\/uploads\/2013\/01\/Opening-live-oysters.jpg\" alt=\"M\u00e9thode d'ouverture des huitres\" width=\"640\" height=\"428\" \/><\/p>\n<p>Les hu\u00eetres peuvent \u00eatre difficiles \u00e0 ouvrir. Elles ont une coquille tr\u00e8s dure, pas de point d\u2019insertion facile, et des tas d\u2019histoires de personnes qui se sont bless\u00e9es. On dit qu&rsquo;en France, \u00e0 la veille de No\u00ebl la plupart des appels vers le 911 fran\u00e7ais (le 18) viennent de gens qui se sont bless\u00e9s en essayant d\u2019\u00e9cailler des hu\u00eetres juste avant un bon d\u00eener de famille et entre amis. Il faut donc rester prudent lorsque vous \u00e9caillez des hu\u00eetres. Prot\u00e9gez-vous les mains et soyez patient avec les hu\u00eetres les plus coriaces.<\/p>\n<p>Tout d&rsquo;abord, comprendre l&rsquo;anatomie d&rsquo;une hu\u00eetre peut aider dans le m\u00e9canisme d&rsquo;ouverture. Les hu\u00eetres poss\u00e8dent une coquille sup\u00e9rieure et coquille inf\u00e9rieure. La partie principale de l&rsquo;hu\u00eetre est contenue dans la coquille inf\u00e9rieure et la coquille sup\u00e9rieure est appel\u00e9e le \u00ab\u00a0couvercle\u00a0\u00bb. Les couvercles ne contiennent g\u00e9n\u00e9ralement aucune partie comestible de chair d&rsquo;hu\u00eetre ou en ont juste un peu. La charni\u00e8re des hu\u00eetres est la partie la moins \u00e9paisse. Les l\u00e8vres sont les minces (aussi les plus large) bords qui se trouvent en face de la charni\u00e8re.<\/p>\n<p>Ensuite, les coquilles sup\u00e9rieures et inf\u00e9rieures sont maintenues ensemble par un muscle principal \u00e0 l&rsquo;int\u00e9rieur appel\u00e9 muscle \u00abadducteur\u00a0\u00bb. Ce muscle est la partie de la chaire d&rsquo;hu\u00eetre \u00e0 couper lors de l&rsquo;ouverture d&rsquo;une hu\u00eetre. Le reste de la chair d&rsquo;hu\u00eetre doit rester intact. La fa\u00e7on la plus commune d\u2019ouvrir une hu\u00eetre est de cibler la charni\u00e8re. Une autre m\u00e9thode consiste \u00e0 cibler le c\u00f4t\u00e9 droit o\u00f9 le muscle adducteur est situ\u00e9.
