Le cebiche, \u00e9galement connu sous le nom de ceviche ou seviche, consiste g\u00e9n\u00e9ralement en un fruit de mer marin\u00e9 dans du jus de citron vert. C\u2019est en fait l&rsquo;acidit\u00e9 du jus de citron qui \u00abcuit\u00bb le fruit de mer. Tous les types de cebiches ne sont pas pr\u00e9par\u00e9s avec des fruits de mer et tous les cebiches de fruits de mer ne sont pas pr\u00e9par\u00e9s avec des fruits de mer crus.<\/p>\n<p>Toutefois, le ceviche le plus classique et le plus traditionnel est g\u00e9n\u00e9ralement fait avec du poisson, et le \u00ab\u00a0cuire\u00a0\u00bb dans du jus de citron vert est un must. C&rsquo;est pourquoi il est tr\u00e8s important d&rsquo;utiliser du poisson tr\u00e8s frais et d\u2019excellente qualit\u00e9 pour pr\u00e9parer le cebiche. Pour cette recette du ceviche du P\u00e9rou, j&rsquo;ai utilis\u00e9 du halibut ou fl\u00e9tan, mais d&rsquo;autres choix son possibles tels que du mahi mahi (appel\u00e9 dorado en Am\u00e9rique du Sud), escolar, hamachi, et du corvina (un type de poissons trouv\u00e9s en Am\u00e9rique du Sud qui est tout \u00e0 fait similaire au fl\u00e9tan) ou autre poisson blanc avec une chair
