Si vous avez visit\u00e9 mon blog auparavant vous devez surement savoir que j\u2019adore les empanadas et je suis constamment \u00e0 la recherche de nouvelles recettes \u00e0 tester. La recette d\u2019empanadas de ce mois est l\u2019empanada de Mendoza.<\/p>\n<p>Mendoza est une province en Argentine (\u00e9galement connu pour ses grands vins). Bien que les empanadas de Mendoza soient tr\u00e8s connues, je n\u2019en ai jamais fait auparavant. Donc ce fut une excellente occasion d&rsquo;apprendre comment les pr\u00e9parer et de connaitre ce qui les rend diff\u00e9rents des autres empanadas fourr\u00e9es \u00e0 la viande et cuites au four.<\/p>\n<p>J&rsquo;ai commenc\u00e9 avec la recette de Rebecca pour la garniture de viande aussi appel\u00e9e picadillo. J&rsquo;ai ajust\u00e9 un petit peu les quantit\u00e9s d&rsquo;\u00e9pices \u00e0 mon go\u00fbt. J\u2019ai aussi ajout\u00e9 de l\u2019origan frais et des oignons verts. Nous avons r\u00e9duit de moiti\u00e9 la quantit\u00e9 de viande (de 1 kg \u00e0 500 g ) et j\u2019en ai eu plus que suffisamment pour 25 empanadas. J\u2019ai voulu savoir ce qui rendais ces empanadas si sp\u00e9ciaux. Cette d\u00e9couverte m&rsquo;amena vers la garniture. Vous pouvez la pr\u00e9parer soit avec du b\u0153uf hach\u00e9 ou bien du b\u0153uf \u00e9miett\u00e9.<\/p>\n<p>Aussi les empanadas de Mendoza sont connues pour ne pas contenir de raisins secs. Ils sont pourtant utilis\u00e9s dans d&rsquo;autres types d&#8217;empanadas. Pour finir, le paprika fum\u00e9 et piquant ou le piment sont tr\u00e8s importants. En plus de la saveur, ils donnent \u00e0 la viande une coloration rouge vif. Pour celles-ci je comptais faire ma recette standard de p\u00e2te \u00e0 empanadas \u00e0 cuire au four ou encore en utilisant des disques achet\u00e9s en magasin. Mais en faisant mes recherches sur Google, j&rsquo;ai appris que la p\u00e2te utilis\u00e9e pour les empanadas de Mendoza \u00e9tait unique. Elle se pr\u00e9pare avec du lait qui lui donne une onctuosit\u00e9 et une douceur que la p\u00e2te \u00e0 empanada standard n&rsquo;a pas.<\/p>\n<p>J\u2019ai donc adapt\u00e9 et traduit la recette de la p\u00e2te de Recetas Ya et de Club Gourmet. Toutes les recettes appellent \u00e0 pr\u00e9parer la p\u00e2te \u00e0 la main. Mais bien s\u00fbr, j&rsquo;ai pris le raccourci du robot de cuisine et j\u2019ai du faire quelques conversions. Si vous avez le temps, je recommande vivement de faire la p\u00e2te en d\u00e9marrant de z\u00e9ro (mais \u00e0 l\u2019aide d\u2019un robot). \u00c7a a vraiment fait la diff\u00e9rence et mes empanadas ont juste cuit \u00e0 merveille.<\/p>\n<p>Ceci est ma nouvelle recette pr\u00e9f\u00e9r\u00e9e de p\u00e2te \u00e0 empanadas \u00e0 cuir au four. La plupart du temps j&rsquo;exp\u00e9rimente avec diff\u00e9rentes garnitures. Cette fois ci, \u00e7a a \u00e9t\u00e9 tellement amusant d&rsquo;essayer une nouvelle fa\u00e7on de pr\u00e9parer la p\u00e2te.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" title=\"Empanadas au b\u0153uf cuites au four\" src=\"https:\/\/www.laylita.com\/recettes\/wp-content\/uploads\/2014\/08\/Empanadas-au-boeuf.jpg\" alt=\"Empanadas au b\u0153uf cuites au four\" width=\"641\" height=\"428\" \/><\/p>\n<p>Autre d\u00e9tail important de ces empanadas &#8211; et empanadas en g\u00e9n\u00e9ral \u2013 est la fermeture churito ou repulgue. Cette fermeture repr\u00e9sente la soudure d\u00e9cor\u00e9e en arrondi en repliant la pate. Rebecca a une vid\u00e9o tr\u00e8s cool sur son poste qui montre comment r\u00e9aliser cela. J&rsquo;avoue que je n&rsquo;ai jamais \u00e9t\u00e9 dou\u00e9e pour faire une belle fermeture repulgue parfaite. Mais il semble que je m\u2019am\u00e9liore \u00e0 force de pratique.<\/p>\n<p>En outre, je suis parano\u00efaque et je crains toujours que la garniture ne sorte, donc ma strat\u00e9gie consiste \u00e0 sceller les bords en les badigeonnant de blanc d&rsquo;\u0153uf. J&rsquo;appuie ensuite sur les bords avec les doigts. Je fais de mon mieux pour r\u00e9aliser la fermeture churito ou repulgue. Pour une fermeture finale j&rsquo;utilise la pointe d&rsquo;une fourchette pour appuyer encore une fois. Cela fonctionne et finalement les empanadas n\u2019ont pas l\u2019air trop mal \u00e0 la sortie du four.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" title=\"Empanadas ou chaussons \u00e0 la viande argentine\" src=\"https:\/\/www.laylita.com\/recettes\/wp-content\/uploads\/2014\/08\/Empanadas-ou-chaussons-a-la-viande-argentin.jpg\" alt=\"Empanadas ou chaussons \u00e0 la viande argentine\" width=\"641\" height=\"962\" \/><\/p>\n<p>Un jour avant que je ne pr\u00e9pare ces empanadas, je lisais le livre Ines del Alma Mia d\u2019Isabel Allende. Le personnage principal du livre est une femme d&rsquo;Espagne qui se rend en Am\u00e9rique du Sud (et permet d&rsquo;\u00e9tablir une colonie espagnole \u00e0 Santiago, Chili). Le livre est moiti\u00e9 fiction moiti\u00e9 historique. Un de ses talents \u00e9tait de faire des empanadas, ce qui lui a permis \u00e0 elle mais aussi \u00e0 d&rsquo;autres de survivre dans des situations de p\u00e9nurie alimentaire. Je dois admettre que je ne connais pas vraiment beaucoup de choses \u00e0 propos de l&rsquo;histoire des empanadas, mais certaines raisons m\u2019ont laiss\u00e9 penser que leur origine \u00e9tait argentine ou chilienne. Je suis s\u00fbre qu&rsquo;il y a d\u00e9j\u00e0 un grand conflit \u00e0 ce sujet et je ne veux pas qu\u2019une guerre \u00e9clate, n\u2019est en moins selon ce livre, il semble qu&rsquo;ils viennent d&rsquo;Espagne (et avant cela, probablement du Moyen-Orient).<\/p>\n<p>Au final, je pense que les Sud-Am\u00e9ricains en g\u00e9n\u00e9ral ont fait un bon travail de perfectionnement (et de commercialisation) des empanadas.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" title=\"Empanadas\" src=\"https:\/\/www.laylita.com\/recettes\/wp-content\/uploads\/2014\/08\/1-Empanadas.jpg\" alt=\"Empanadas\" width=\"641\" height=\"428\" \/><\/p>\n<p>Voil\u00e0, j&rsquo;ai du pr\u00e9parer quelques sauces de trempage, j\u2019ai pr\u00e9par\u00e9 deux sauces <a href=\"https:\/\/www.laylita.com\/recettes\/1404\/sauce-chimichurri-traditionnelle\/\" target=\"_blank\" rel=\"noopener noreferrer\">chimichurri <\/a>l\u00e9g\u00e8rement diff\u00e9rentes pour ces empanadas. La premi\u00e8re est une sauce mix\u00e9e avec un peu de vinaigre de vin blanc et pour la deuxi\u00e8me sauce, j&rsquo;ai plut\u00f4t cisel\u00e9 les herbes cette fois et utilis\u00e9 du vinaigre balsamique, les deux ont bien fonctionn\u00e9. Nicolas n&rsquo;est pas un grand fan de vinaigre balsamique (je sais, qu\u2019est ce qui cloche chez lui?) mais j&rsquo;ai ador\u00e9. Une sorte de \u00a0sauce piquante aji criollo ou bien une sauce piquante de tamarillo se marierait aussi bien avec ces d\u00e9licieux empanadas.<\/p>\n<h2>P\u00e2te pour empanadas au
