La classe des chefs qui passent la matin\u00e9e enti\u00e8re \u00e0 faire une sauce parfaite en marinant la viande \u00e0 feu doux, patiemment. Pour couronner le tout, il sert ce diner avec un vin d\u00e9licieux. Un de mes moments favoris lorsque nous visitons la famille de Nico a Aix-en-Provence est toute cette gastronomie, en particulier celle faite maison. Les parents de Nico nous ont rendu visite en 2008. Cette ann\u00e9e l\u00e0, j\u2019avais h\u00e2te d\u2019apprendre \u00e0 faire deux recettes : la tarte aux poireaux de Monique, je vous promets que c\u2019est la meilleure et ferai part de la recette bient\u00f4t ; et la daube de Bernard. Ils ont aussi pr\u00e9par\u00e9 des p\u00e2tes au poulet et aux courgettes, un plat aux artichauts, parmi tant d\u2019autres qu\u2019il faut que je documente.<\/p>\n<p><!--more--><\/p>\n<p>La daube est un ragout typique du Sud de la France. Un des th\u00e8mes primordiaux est celui de la cuisson lente. On commence le matin et termine pour midi. C\u2019est une des recettes classiques de Bernard. Il la fait depuis des d\u00e9cennies et en est un expert. pr\u00e9par\u00e9 cette daube plusieurs fois d\u00e9j\u00e0. Elle est facile \u00e0 r\u00e9aliser, et parfaite pour les saisons fra\u00eeches ou froides ou l\u2019on a envie de se r\u00e9chauffer \u00e0 table. La plupart des daubes sont faites \u00e0 partir de viande de b\u0153uf, mais peuvent aussi se cuisiner avec de l\u2019agneau. Nous sommes all\u00e9s faire les courses \u00e0 Pike Place Market pour acheter les ingr\u00e9dients, Bernard essayait d\u2019expliquer le morceau de viande qu\u2019il souhaitait, ce qui f\u00fbt le jarret. Il pr\u00e9f\u00e8re cette partie due a sa nature g\u00e9latineuse, ce qui aide la sauce \u00e0 \u00e9paissir. Comme on le cuit pendant plusieurs heures il devient tr\u00e8s tendre.<\/p>\n<p>J\u2019ai d\u00e9couvert qu\u2019aux Etats Unis, le jarret n\u2019est pas tr\u00e8s facile \u00e0 trouver, notre boucher nous l\u2019a coup\u00e9 mais a expliqu\u00e9 qu\u2019en g\u00e9n\u00e9ral il s\u2019utilise hach\u00e9. Cela m\u2019a aussi rappel\u00e9 qu\u2019en \u00c9quateur on l\u2019utilise pour les soupes fr\u00e9quemment. Personnellement j\u2019aime le jarret comme les autres viandes : avec les os. On peut pr\u00e9parer la daube avec ou sans os, selon les pr\u00e9f\u00e9rences.<\/p>\n<p>J\u2019ai vu des recettes de daube avec plusieurs types de l\u00e9gumes. Cependant, la recette de Bernard garde les choses au plus simple : oignons, tomates, carottes, herbes et vin. Lorsqu\u2019il la pr\u00e9para il utilisa des tomates en conserve de bonne qualit\u00e9 d\u00e9j\u00e0 pel\u00e9es. Si vous avez le temps et la patience vous pouvez prendre des tomates fra\u00eeches et les peler.<\/p>\n<p>La daube s\u2019assaisonne d\u2019herbes de Provence, qui sont un m\u00e9lange d\u2019herbes s\u00e8ches typiques de la r\u00e9gion. On les trouve dans la plupart des supermarch\u00e9s, \u00e9videmment en France et aussi \u00e0 l\u2019\u00e9tranger. Vous pouvez aussi faire votre propre mixture : thym, romarin, origan, basilic, sage, lavande, fenouil, marjolaine. La proportion exacte varie, le thym est l\u2019herbe primordiale. Certains ajoutent de l\u2019anis \u2013 \u00e0 vous de voir.<\/p>\n<p>La daube se sert g\u00e9n\u00e9ralement avec des p\u00e2tes, m\u00eame si l\u2019Equatorienne en moi se dit qu\u2019elle irait bien avec du riz.<\/p>\n<p>Enfin, il y va de nature d\u2019accompagner ce plat de vin rouge, j\u2019ai demand\u00e9 une recommandation \u00e0 Nico qui m\u2019a dit : \u00ab comme c\u2019est une viande rouge, on peut prendre un vin de caract\u00e8re sans aller dans les exc\u00e8s. Un Zinfandel sera peut \u00eatre trop fort et coupera l\u2019app\u00e9tit.
