Chez moi, on adore cuisiner ce plat qui, en plus d\u2019\u00eatre rapide et d\u00e9licieux, permet de retrouver dans l\u2019assiette cette m\u00eame sensation de fraicheur et de croquant que son cousin bovin\u00e9. La qualit\u00e9 et la fraicheur du produit sont \u00e9videmment tr\u00e8s importantes. De la m\u00eame mani\u00e8re, un pigment naturel, l\u2019astaxanthine, pr\u00e9sent dans la nourriture int\u00e9gr\u00e9e par le saumon et qui appartient \u00e9galement \u00e0 la famille du carot\u00e8ne, rend sa chair orange. Ainsi, la couleur des saumons sauvages varie grandement en fonction de la nourriture qu\u2019ils chassent. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">En \u00e9levage, les pisciculteurs ajoutent de l\u2019astaxanthine dans leur ration de granul\u00e9s afin de leur donner un h\u00e2le rose orang\u00e9. Cette pratique est simplement cens\u00e9e attirer les consommateurs, qui partagent la croyance populaire que plus un saumon est rouge, plus il est frais, saveur et de meilleure qualit\u00e9. Cette pi\u00e8ce, situ\u00e9e au c\u0153ur du\nfilet, est charnue, tr\u00e8s gouteuse et d\u00e9pourvue d\u2019arr\u00eate.
