La recette ici pr\u00e9sent\u00e9e est la version classique \u00e0 r\u00e9aliser, avec un petit ajout de Parmigiano Reggiano, qui vient contrebalancer le simple go\u00fbt de la viande, et une pointe d&rsquo;huile d&rsquo;olive. Je porte beaucoup d\u2019importance \u00e0 la d\u00e9coupe du morceau&nbsp;: un geste pr\u00e9cis et une d\u00e9coupe claire sont les secrets d\u2019un tartare r\u00e9ussi, au moins en termes esth\u00e9tiques. Si je devais la jouer puriste du P\u00e9rigord qui m\u2019a vu grandir, je dirais m\u00eame qu\u2019id\u00e9alement nous devrions faire revenir ces pommes de terre dans la graisse de canard\u2026 un must. Mais pour les jours \u00e9quilibr\u00e9s et moins extr\u00eames, pr\u00e9f\u00e9rez une belle salade verte assaisonn\u00e9e en huile d\u2019olive vierge extra, vinaigre balsamique et herbes
