En cuisine, ma m\u00e8re et ma grand-m\u00e8re sont mes exemples pour toujours. Elles m\u2019ont inspir\u00e9, patiemment appris et transmis leurs plus belles recettes, dont les effluves parcouraient les couloirs de la maison avec une force incroyable. Et s\u2019il y a un dessert qu\u2019il faut que je retienne de ma maman, c\u2019est bien ce moelleux au chocolat. J\u2019en suis un fan absolu, mais il faut savoir l\u2019utiliser avec parcimonie. L\u00e0 o\u00f9 je pense que c\u2019est un apport exceptionnel, c\u2019est que le sel contrebalance la douceur et la l\u00e9g\u00e8ret\u00e9 du sucr\u00e9, qu\u2019il vient apporter une touche de pr\u00e9sence \u00e0 un dessert au go\u00fbt d\u00e9licatement sucr\u00e9. Si cette technique de cuisson permet certes une fonte plus lente et homog\u00e8ne du chocolat, j\u2019aime travailler directement sur le feu pour faire fondre ma tablette. Attention dans ce cas bien s\u00fbr, \u00e0 ne pas laisser bruler notre chocolat\u2026 et \u00e0 tr\u00e8s rapidement le retirer du feu pour le transvaser dans un contenant \u00e0 temp\u00e9rature ambiante. Apr\u00e8s avoir form\u00e9 un appareil avec nos autres ingr\u00e9dients, nous aurons d\u00e9j\u00e0 un d\u00e9licieux m\u00e9lange. C\u2019est un supplice de r\u00e9sister \u00e0 ne pas le manger directement\u2026 mais forcez-vous \u00e0 mettre le cake au four, vous ne le regretterez pas&nbsp;!<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Une association d\u00e9licieuse est celle du chocolat et du basilic frais. En ciseler quelques feuilles fraiches sur le moelleux chaud, que ce soit pour la pr\u00e9sentation ou pour le go\u00fbt, ne sera pas de trop. Pour rehausser en fraicheur, vous pourriez penser \u00e0 un sorbet fraise ou framboise\u2026 ou des fruits frais. On l&rsquo;a fait d\u00e9j\u00e0 3 fois de suite et il devient un de nos cakes favoris en famille. Pour le chocolat j&rsquo;ai utilis\u00e9 un m\u00e9lange de chocolat moiti\u00e9 semi-sucr\u00e9 et moiti\u00e9 chocolat \u00e9quatorien 72% de Hoja Verde. Comme c&rsquo;est l&rsquo;ingr\u00e9dient principal du cake le chocolat que vous choisissez changera le gout. J&rsquo;ai aussi exp\u00e9riment\u00e9 avec plusieurs m\u00e9thodes pour fondre le chocolat et le beurre sal\u00e9 en bain marie ou directement en casserolle. Les deux m\u00e9thodes fonctionnent, personnellement je pr\u00e9f\u00e8re le bain marie dans un moule en verre que j&rsquo;utilise directement pour l&rsquo;\u00e9tape suivante, ajoutant sucre, oeufs, et farine.
