Et pourtant, il est incroyable que dans de nombreux pays du Sud, ce ne soit que r\u00e9cemment que les gens aient commenc\u00e9 \u00e0 appr\u00e9cier ses fantastiques propri\u00e9t\u00e9s nutritives et culinaires.<\/p>\n<p><a href=\"https:\/\/www.laylita.com\/recettes\/1932\/cuisson-du-quinoa\/\">Recette: la cuisson du quinoa<\/a><\/p>\n<h2>Nutrition<\/h2>\n<p>Lorsque j&rsquo;ai voyag\u00e9 au P\u00e9rou en tant que nutritionniste de sant\u00e9 publique il y a de nombreuses ann\u00e9es, j&rsquo;ai d\u00e9couvert l&rsquo;histoire fascinante et les incroyables propri\u00e9t\u00e9s nutritionnelles du quinoa, et entre autres, que pendant leur conqu\u00eate, les Espagnols ayant r\u00e9alis\u00e9 l&rsquo;importance du quinoa pour les populations autochtones en avaient interdit sa culture. Et en effet, m\u00eame au-del\u00e0 de son utilisation rituelle et c\u00e9r\u00e9monielle, le quinoa \u00e9tait le grain m\u00e8re, sa qualit\u00e9 prot\u00e9ique \u00e9tant plus proche du lait maternel que de toute autre nourriture (y compris le lait de vache). Le quinoa a \u00e9t\u00e9 utilis\u00e9 comme aliment de sevrage par les femmes qui ont toujours eu pour r\u00f4le de nourrir la population. Comment ces femmes savaient-elles, il y a si longtemps, ce que nous sommes capables d&rsquo;\u00e9tudier en cet \u00e2ge scientifique, en apprenant que l&rsquo;excellente qualit\u00e9 prot\u00e9ique du quinoa est due \u00e0 sa composition chimique?<\/p>\n<p>Il s&rsquo;av\u00e8re que le quinoa est une prot\u00e9ine compl\u00e8te avec encore plus de prot\u00e9ines disponibles que la viande. Les prot\u00e9ines sont n\u00e9cessaires \u00e0 la croissance, au cerveau et aux muscles ainsi qu&rsquo;\u00e0 la r\u00e9paration des tissus. (Attention cependant, parce que le quinoa souffl\u00e9 d\u00e9truit la prot\u00e9ine compl\u00e8te.) En outre, le quinoa est plein de fibres, si important pour une bonne digestion, et il est sans gluten.Les populations antiques ont appr\u00e9ci\u00e9 la cuisson l\u00e9g\u00e8re des jeunes feuilles de la plante de quinoa qui sont pleines de prot\u00e9ines et de fibres, ainsi que de vitamine A et de fer.<\/p>\n<p>Dans les Andes, le quinoa peut pousser \u00e0 une altitude beaucoup plus \u00e9lev\u00e9e que le ma\u00efs ou les pommes de terre. Dans ces r\u00e9gions, il y a longtemps, le quinoa \u00e9tait utilis\u00e9 \u00e0 la place du ma\u00efs dans une d\u00e9licieuse boisson un peu \u00e9paisse, ferment\u00e9e connue sous le nom de \u00ab chicha \u00bb, toujours pr\u00e9sente alors et souvent maintenant dans tous les \u00e9v\u00e9nements communautaires. Une propri\u00e9t\u00e9 merveilleuse du quinoa est sa capacit\u00e9 \u00e0 prosp\u00e9rer dans les climats froids et dans les sols pauvres. J&rsquo;ai ador\u00e9 sa texture de noisette et sa capacit\u00e9 \u00e0 me faire sentir d\u00e9licieusement rassasi\u00e9e, sans aucune lourdeur. Je l&rsquo;ai utilis\u00e9 pour farcir du poulet r\u00f4ti, faire un taboul\u00e9 avec du persil et de la menthe de mon jardin, comme ingr\u00e9dient principal dans les <a href=\"https:\/\/michelle-ofried.squarespace.com\/news\/2016\/9\/9\/double-quinoa-patties-or-veggie-burgers\" target=\"_blank\" rel=\"noopener\">galettes de quinoa<\/a> et le mis dans des g\u00e2teaux au lieu de noix.<\/p>\n<p>L&rsquo;un des moyens les plus efficaces de promouvoir sa consommation g\u00e9n\u00e9rale en \u00c9quateur \u00e9tait de le m\u00e9langer avec du riz pour en faire une sorte de <a href=\"https:\/\/michelle-ofried.squarespace.com\/news\/2016\/9\/12\/quinoa-rice-pilaf\" target=\"_blank\" rel=\"noopener\">pilaf<\/a>. Il y a des ann\u00e9es, il \u00e9tait n\u00e9cessaire de laver ou de rincer le quinoa, d&rsquo;enlever la saponine, un enrobage amer naturel (qui le prot\u00e8ge des oiseaux qui aiment le quinoa). Cependant maintenant, la plupart du quinoa provient d&rsquo;une vari\u00e9t\u00e9 sucr\u00e9e ou a \u00e9t\u00e9 soigneusement trait\u00e9e pour enlever son amertume.
