Les plats d\u2019accompagnements exacts varient selon le restaurant ou le cuistot de la maison qui le pr\u00e9pare. &nbsp;Mais quelques un des plus utilis\u00e9s sont les plantains m\u00fbrs frits, le ma\u00efs bouilli ou mote, llapingachos ou tourtes de pommes de terre, des tranches d\u2019avocats, du riz des pommes de terre \u00e0 l\u2019eau du manioc, de la sauce au fromage des empanadas (chaussons), de la salade, graines de ma\u00efs grill\u00e9es, entre autres. Une fois tous ces plats r\u00e9unis cela devient \u00e9norme&nbsp;! (parfois servi dans deux plats pour pouvoir accommoder le tout).<\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">Lorsque il est pr\u00e9par\u00e9 \u00e0 la maison, vous pouvez omettre certains des accompagnements les plus lourds, mettre uniquement ce qui vous fait plaisir et ce que vous avez sous la main. Elle est bonne mais il lui manquait le go\u00fbt intense du roucou. Je voulais aussi m\u2019assurer qu\u2019elle aurait la couleur rouge intense qui fait la carne colorada \u00e9quatorienne si unique. Si vous connaissez le roucou, vous devez savoir que son go\u00fbt est tr\u00e8s subtil, il est souvent utilis\u00e9 comme colorant, cependant pour ce plat il faut bien sentir ce go\u00fbt si particulier de terre dans la viande. Pour cette mise \u00e0 jour de la recette j\u2019ai augment\u00e9 la quantit\u00e9 de roucou de la marinade et j\u2019ai aussi fait de la graisse au roucou pour cuire la viande.<\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">Une autre chose que j\u2019ai voulu am\u00e9liorer c\u2019\u00e9tait la viande, la carne colorada peut \u00eatre faite avec du porc ou du b\u0153uf. Quand j\u2019ai demand\u00e9 autour de moi qu\u2019elle \u00e9tait la version pr\u00e9f\u00e9r\u00e9e j\u2019ai eu plusieurs r\u00e9ponses diff\u00e9rentes, donc cela d\u00e9pendra de votre go\u00fbt \u00e0 vous. <\/span><\/p>\n\n\n\n<p><span style=\"font-weight: 400;\">En \u00c9quateur, beaucoup des plats de viande et le b\u0153uf en particulier, sont faits avec des morceaux qui requi\u00e8rent des cuissons longues. J\u2019ai mang\u00e9 ce plat dans des restaurants o\u00f9 ils le cuisent tr\u00e8s rapidement avec pour r\u00e9sultat une viande dure et trop cuite, mais pas suffisamment pour qu\u2019elle soit tendre. Malheureusement ceci est tr\u00e8s commun en \u00c9quateur ou les gens ont l\u2019habitude de manger la viande bien cuite. Pour la variante au b\u0153uf j\u2019ai voulu utiliser une viande \u00e0 rago\u00fbt et la cuire lentement jusqu\u2019\u00e0 ce qu\u2019elle soit tendre ou des morceaux plus \u00ab&nbsp;nobles&nbsp;\u00bb comme le faux filet en le cuisant \u00e0 point ou moins encore selon les pr\u00e9f\u00e9rences.
