Cette cuisse de porc r\u00f4ti hornado de chancho est pr\u00e9par\u00e9e en marinant le porc dans une sauce \u00e0 base de bi\u00e8re, de jus d\u2019orange, d\u2019ail, de roucou, et d\u2019\u00e9pices vari\u00e9es. La plupart de ces endroits r\u00f4tissent le cochon entier dans des fours en argile. Mais j\u2019ai eu du mal \u00e0 trouver un jambon frais entier et je n\u2019en n\u2019ai trouv\u00e9 qu\u2019un tr\u00e8s gros donc je vous sugg\u00e8re de le commander \u00e0 l\u2019avance \u00e0 votre boucher. Il est impossible de servir ce r\u00f4ti seul. Les accompagnements sont multiples et essentiels (ce qui est vrai pour beaucoup des plats \u00e9quatoriens), ceux-ci varient d\u2019une r\u00e9gion \u00e0 une autre et d\u2019un restaurant \u00e0 un autre. <\/p>\n\n\n\n<p>Je ne peux pas imaginer de manger un hornado sans avoir du \u00ab mote \u00bb ou ma\u00efs pel\u00e9 ou les oignons marin\u00e9 \u00ab curtido \u00bb et des avocats dans la m\u00eame bouch\u00e9e. Les accompagnements sont limit\u00e9s par le fait de leurs disponibilit\u00e9s, de vos envies personnelles et du temps dont vous disposez. Comme le r\u00f4ti est cuit avec du beurre et de la bi\u00e8re, il y aura beaucoup de sucs dans le plat \u00e0 four. C\u2019est la mani\u00e8re optimale pour le pr\u00e9parer, ainsi toutes les saveurs p\u00e9n\u00e8trent en profondeur la viande. Cependant, il est possible de mariner le jambon pendant seulement un jour ou quelques heures.
