Je dois pr\u00e9ciser que, contrairement au Mexique et en Am\u00e9rique centrale o\u00f9 les chicharrones sont des couennes de porc fries, ce que nous appelons rillons en Equateur sont en fait des morceaux de viande de porc frie, tout aussi gras mais plus savoureux. Pour cette recette j&rsquo;ai fait quelques boulettes farcies au fromage et d&rsquo;autres au chorizo, au lieu des rillons. Dans certains cas, la derni\u00e8re \u00e9tape de la friture des boulettes est omise et on les sert juste apres les avoir farcies.<\/p>\n<p>Personnellement, je pr\u00e9f\u00e8re les faire frire parce que j&rsquo;aime l&rsquo;ext\u00e9rieur croustillant qu&rsquo;il develope et le processus garantit \u00e9galement que les boulettes soient belles et chaudes quand vous les servez. J&rsquo;ai essay\u00e9 de trouver une variante plus saine en faisant bouillir les bananes plantain jusqu&rsquo;\u00e0 ce qu&rsquo;elles soient tendres (c&rsquo;est a dire sans les frire du tout), mais il est beaucoup plus difficile d&rsquo;obtenir la bonne consistance de cette fa\u00e7on. A experimenter, j&rsquo;ai fini avec un autre plat appel\u00e9 majado ou molloco de Verde &#8211; un plat avec des ingr\u00e9dients similaires aux boulettes de banane plantain, mais au lieu de faire des boulettes vous \u00e9crasez les bananes plantains et m\u00e9langez le tout.<\/p>\n<p>Les bananes plantain vertes (on en trouve aussi des jaunes) peuvent \u00eatre difficile \u00e0 \u00e9plucher, la meilleure fa\u00e7on de les \u00e9plucher est de couper juste la peau &#8211; sans aller en profondeur pour laisser la chair intacte, dans le sens de la longueur. Ensuite d\u00e9tachez la chair au couteau et finissez de la retirer a la main. Si besoin est, finissez l&rsquo;\u00e9pluchure avec un couteau en rasant la peau de la banane. Je fais cela \u00e0 l&rsquo;eau froide pour les garder fraiches et les emp\u00e9cher de noircir.
