Ces p\u00e2tisseries frites sont servies avec du miel de panela ou sirop de piloncillo (Une m\u00e9lasse de canne \u00e0 sucre solidifi\u00e9e en un bloc dur). Les pristi\u00f1os sont g\u00e9n\u00e9ralement faits en forme de couronne, mais cela d\u00e9pend des familles et ainsi elles peuvent prendre des formes diff\u00e9rentes. \u00a0Les pristi\u00f1os sont cousins des \u00ab\u00a0bu\u00f1uelos\u00a0\u00bb ou beignets, eux aussi tr\u00e8s populaires en Am\u00e9rique latine et en Espagne. Une des principales diff\u00e9rences c\u2019est que les pristi\u00f1os se font avec de la levure chimique et les bu\u00f1uelos avec de la levure de boulanger et donne un r\u00e9sultat un peu plus liquide. <\/p>\n\n\n\n<p>En Equateur, les deux sont servis avec le sirop ou miel de panela, et les bu\u00f1uelos peuvent \u00eatre fabriqu\u00e9s avec de la farine de ma\u00efs ou de manioc. Lorsque mon mari a mang\u00e9 des pristi\u00f1os pour la premi\u00e8re fois, il a dit qu\u2019elles lui rappelaient des bugnes. Mot tr\u00e8s proche du mot \u00ab\u00a0bu\u00f1uelos\u00a0\u00bb. En France ils sont souvent consomm\u00e9s pendant le Mardi Gras. Ceci me rappelle des p\u00e2tisseries frites faites par mon amie italienne Rossana, qui les pr\u00e9pare pour le Carnavale. Je pense qu\u2019il doit avoir un lien de parent\u00e9 entre ces p\u00e2tisseries et celles du continent sud am\u00e9ricain. La p\u00e2te est tr\u00e8s facile \u00e0 faire, et comme d\u2019habitude, je me facilite la vie en utilisant le mixer. La p\u00e2te est l\u00e9g\u00e8rement \u00e9pic\u00e9e avec de la cannelle, des clous de girofle et de l\u2019anis. Les \u00e9pices peuvent \u00eatre ajout\u00e9es directement \u00e0 la p\u00e2te. Ou plus traditionnellement, faire bouillir de l\u2019eau et faire infuser les \u00e9pices pour ensuite utiliser cette eau \u00e0 la fabrication de la p\u00e2te. J\u2019ai essay\u00e9 les deux m\u00e9thodes et je pr\u00e9f\u00e8re la m\u00e9thode traditionnelle. Comme tout bon \u00e9quatorien, je rajoute un peu de gnole faite d\u2019alcool de cane ou du rhum \u00e0 la pate, mais si vous ne voulez pas utiliser d\u2019alcool ajouter un peu plus d\u2019eau \u00e9pic\u00e9e. <\/p>\n\n\n\n<p>J\u2019ai aussi essay\u00e9 de les faire au four pour des questions de sant\u00e9 et la v\u00e9rit\u00e9 est que c\u2019est bien meilleur frit\u00a0; ils perdent de leur l\u00e9g\u00e8ret\u00e9 et deviennent un peu mastoc au four. N\u2019emp\u00eache qu\u2019ils sont encore bons, donc j\u2019inclus cette recette aussi. Le sirop de panela ou piloncillo est \u00e9pic\u00e9 avec de la cannelle et des clous de girofle, et pour terminer j\u2019aime bien saupoudrer dessus de la cannelle. Si vous n\u2019avez pas de panela ou si comme mon petit de 10 ans vous n\u2019aimez pas le go\u00fbt de la panela, vous pouvez la remplacer par du miel.<\/p>\n\n\n<p><img loading=\"lazy\"
