Ces rago\u00fbts sont habituellement faits \u00e0 base de b\u0153uf, de ch\u00e8vre, de mouton ou de poulet. La viande ou la volaille est cuite doucement dans une sauce faite \u00e0 partir de liquides tels que de la bi\u00e8re, de la chicha, du jus de fruits ou du vin ; de l\u00e9gumes tels que des tomates, des oignons et\/ou des poivrons ; d\u2019assaisonnement, d\u2019herbes et d\u2019\u00e9pices vari\u00e9s tels que l\u2019ail, le cumin, la coriandre, le roucou, la cannelle, le persil, l\u2019origan entre autres. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Les ingr\u00e9dients exacts et les quantit\u00e9s varient d\u2019un type de seco \u00e0 l\u2019autre, ainsi que d\u2019une r\u00e9gion \u00e0 l\u2019autre, mais l\u2019objectif est toujours le m\u00eame : obtenir une viande tendre et d\u00e9licieuse qui se d\u00e9croche de l\u2019os (si la pi\u00e8ce de viande en a un) en la touchant \u00e0 peine et qui fond dans votre bouche ; le tout dans une savoureuse sauce qui a doucement absorb\u00e9 la saveur de chaque ingr\u00e9dient pour cr\u00e9er un go\u00fbt d\u00e9licieux. En fait, le rago\u00fbt de ch\u00e8vre est souvent fait \u00e0 partir d\u2019agneau car cette viande est plus facile \u00e0 trouver. Ces deux viandes ont vraiment un go\u00fbt diff\u00e9rent, et m\u00eame si vous utilisez exactement les m\u00eames l\u00e9gumes, \u00e9pices et liquides, la viande donne sa propre saveur au seco. Cela r\u00e9sulte en un go\u00fbt plus doux mais plus riche pour la ch\u00e8vre et en un go\u00fbt plus fort pour l\u2019agneau. Pour expliquer cette diff\u00e9rence de go\u00fbt, r\u00e9fl\u00e9chissez en termes de vins qui s\u2019accorderaient avec ces plats : avec le rago\u00fbt de ch\u00e8vre un Pinot Noir d\u2019Or\u00e9gon serait parfait alors que pour un rago\u00fbt d\u2019agneau, c\u2019est du Cabernet de Washington qui serait le plus adapt\u00e9. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Bien s\u00fbr, je n\u2019ai pas utilis\u00e9 les m\u00eames ingr\u00e9dients et \u00e9pices pour ce rago\u00fbt d\u2019agneau que pour le seco de chivo. Cette fois, j\u2019ai utilis\u00e9 un m\u00e9lange de bi\u00e8re, de vin et de jus de narangille alors que pour le rago\u00fbt de ch\u00e8vre, j\u2019avais juste utilis\u00e9 de la chicha et du jus de narangille. Il y a aussi une diff\u00e9rence au niveau des \u00e9pices et des herbes utilis\u00e9es : par exemple avec le rago\u00fbt de ch\u00e8vre j\u2019avais seulement utilis\u00e9 de la coriandre mais avec ce rago\u00fbt d\u2019agneau j\u2019ai ajout\u00e9 du persil et de l\u2019origan.
