Elles sont habituellement faites avec des pommes de terre et fourr\u00e9es au fromage. Cependant, elles peuvent \u00eatre faites \u00e0 partir d\u2019autres ingr\u00e9dients. Ces \u00ab llapingachos au mote \u00bb sont la cons\u00e9quence d\u2019une trop grande quantit\u00e9 de restes apr\u00e8s une \u00ab fritada de chancho \u00bb, un plat \u00e0 base de porc brais\u00e9 similaire aux carnitas de porc mexicaines. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">La fritada est servie avec de nombreux accompagnements, l\u2019un d\u2019entre eux est le mote (ou hominy) au ma\u00efs. J\u2019aime avoir des restes, mais j\u2019aime aussi exp\u00e9rimenter et transformer mes restes en quelque chose de diff\u00e9rent du plat d\u2019origine. C\u2019est une bonne mani\u00e8re d\u2019essayer de nouvelles recettes et cela rend aussi les restes plus attractifs pour mes enfants. Cela m\u2019\u00e9vite les commentaires tels que \u00ab pourquoi mange-t-on la m\u00eame chose qu\u2019hier ? \u00bb. Une des choses que je pr\u00e9f\u00e8re dans la fritada est lorsque je tombe sur une bouch\u00e9e de porc combin\u00e9e avec du mote, des oignons rouges marin\u00e9s et de la sauce piquante. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ces galettes au mote recr\u00e9ent ce go\u00fbt et la sauce aux cacahu\u00e8tes cr\u00e9meuse, napp\u00e9e sur le dessus, leur donne une saveur J\u2019avais pr\u00e9vu de les faire exactement de la m\u00eame fa\u00e7on que ceux aux pommes de terre, mais il a fallu mouliner le mote \u00e0 l\u2019aide d\u2019un robot au lieu de simplement l\u2019\u00e9craser comme les pommes de terre. Apr\u00e8s l\u2019avoir moulu et m\u00e9lang\u00e9 \u00e0 l\u2019oignon revenu dans de l\u2019huile, j\u2019ai r\u00e9alis\u00e9 que le mote n\u2019avais pas autant d\u2019amidon que les pommes de terre et que j\u2019aurais donc besoin d\u2019une colle pour le remplacer. J\u2019ai donc ajout\u00e9 quelques \u0153ufs \u00e0 la p\u00e2te \u00e0 base de mote, mais elle \u00e9tait encore trop molle.<\/p>\n<p>\u00a0<\/p>\n<p>Comme lorsque je fais des <a href=\"https:\/\/www.laylita.com\/recettes\/1420\/gallettes-mais-humitas\/\" target=\"_blank\" rel=\"noopener noreferrer\">g\u00e2teaux de ma\u00efs \u00e0 la vapeur (des \u00ab humitas \u00bb)<\/a>, j\u2019ai ajout\u00e9 de la farine de ma\u00efs, qui a permis d\u2019obtenir une belle consistance de p\u00e2te. J\u2019ai fourr\u00e9 la moiti\u00e9 des llapingachos avec des morceaux de fritada au porc \u00e9miett\u00e9s et l\u2019autre moiti\u00e9 avec du fromage. Ces llapingachos furent si d\u00e9licieux que je vais probablement en refaire m\u00eame si je n\u2019ai plus de reste de fritada. Ceux au fromage sont excellents et on peut utiliser n\u2019importe quel reste pour les fourrer. Je pense que la prochaine fois, j\u2019utiliserai des restes de poulet, de porc ou de b\u0153uf r\u00f4tis. Ces galettes au mote ont \u00e9t\u00e9 servies napp\u00e9es d\u2019une savoureuse sauce aux cacahu\u00e8tes, d\u2019oignons rouges marin\u00e9s et d\u2019une sauce piquante \u00ab Aji criollo \u00bb.<\/p>\n<p>\u00a0<\/p>\n<p>Les llapingachos traditionnels \u00e0 la pomme de terre sont servis avec un \u0153uf frit et du chorizo, mais dans ce cas, je les ai servis comme amuse-bouche. Si vous voulez les servir en plat principal, je recommande d\u2019ajouter l\u2019\u0153uf frit. Le chorizo sera peut-\u00eatre de trop si les galettes sont fourr\u00e9es au porc, mais sera parfait si elles sont fourr\u00e9es au fromage. Des tranches d\u2019avocat accompagneront aussi tr\u00e8s bien ces llapingachos \u2013 ou n\u2019importe quel plat d\u2019apr\u00e8s moi !<\/p>\n<p><img loading=\"lazy\" decoding=\"async\"
