J\u2019aime aussi le c\u00f4t\u00e9 multi facettes de ces rago\u00fbts, vous pouvez faire un seco de b\u0153uf grandiose en le pr\u00e9parant de la mani\u00e8re la plus classique, tout au moins en Equateur. <\/p>\n\n\n\n<p>Cela se fait avec de la bi\u00e8re, auparavant on utilisait de la chicha, une boisoon faite \u00e0 base de ma\u00efs ferment\u00e9, mais de nos jours la bi\u00e8re l\u2019a remplac\u00e9e comme liquide de base pour pr\u00e9parer un bon seco. J\u2019ai voulu faire un changement en utilisant de la pulpe de tamarin en plus de la bi\u00e8re, ou du jus de \u00ab\u00a0naranjillo\u00a0\u00bb qui est aussi tr\u00e8s pris\u00e9. <\/p>\n\n\n\n<p>De bons souvenirs de ma m\u00e8re achetant d\u2019\u00e9normes quantit\u00e9s de tamarin, parfois en gousses enti\u00e8res et parfois, seulement la pulpe et les graines tass\u00e9es dans des sacs en plastique de taille moyenne. J\u2019adorais mettre la cuill\u00e8re dans cette pulpe odorante et la manger nature. C\u2019\u00e9tait bon mais puissant\u00a0! <\/p>\n\n\n\n<p>Ma m\u00e8re faisait bouillir la pulpe avec de la panela ou sucre brun pour faire du \u00ab\u00a0fresco de tamarindo\u00a0\u00bb, une boisson tr\u00e8s rafraichissante. Pour cette recette j\u2019ai utilis\u00e9 de la pulpe congel\u00e9e qu\u2019on trouve dans la plupart des magasins de nourriture latino, si vous n\u2019en trouvez pas, vous pouvez vous rabattre sur le jus de tamarin, mais s\u2019il y a du sucre ajout\u00e9, ne pas mettre de panela ou de sucre brun dans la recette, sinon votre sauce risque d\u2019\u00eatre trop sucr\u00e9e. <\/p>\n\n\n\n<p>On voit aussi dans les magasins des gousses enti\u00e8res, simplement vous pelez la peau dure et vous mettez \u00e0 bouillir l\u2019int\u00e9rieur, graines et pulpes ensemble avec une tasse d\u2019eau, ensuite vous retirez les graines et gouttez, vous pouvez r\u00e9duire jusqu\u2019\u00e0 r\u00e9ussir la concentration voulue.<\/p>\n\n\n\n<p>Un des meilleurs aspects du seco, c\u2019est sa sauce et c\u2019est pour cela qu\u2019il est toujours servi avec du riz qui l\u2019absorbera. D\u2019autres accompagnements comme du manioc bouilli ou frit, des plantains doux frits, les oignons rouges marin\u00e9s ou une petite salade, des tranches d\u2019avocats et une sauce piquante peuvent
