Faite avec un refrito ou sofrito de beurre, oignons, ail et roucou moulu. Cette d\u00e9licieuse pur\u00e9e est servie avec du fromage frais, des \u0153ufs durs, \u00e9chalotes ou oignons frais et autres garnitures. Le molo est g\u00e9n\u00e9ralement servi \u00e0 P\u00e2ques et est mang\u00e9 apr\u00e8s la soupe traditionnelle fanesca ou soupe de P\u00e2ques. N\u00e9anmoins j\u2019adore faire cette recette de pur\u00e9e et elle accompagne merveilleusement bien d\u2019autres mets, donc je la pr\u00e9pare souvent.
