Cette recette est plus adapt\u00e9e aux petits comit\u00e9s, \u00e0 une c\u00e9l\u00e9bration de famille ou tout simplement parce que vous en avez envie. Cette version facile du \u00ab hornado \u00bb (enfourn\u00e9) peut \u00eatre r\u00e9alis\u00e9e avec des morceaux de porc plus petits, elle a donc besoin de moins de temps de marinade et bien s\u00fbr moins de temps de cuisson. J\u2019ai utilis\u00e9 une \u00e9paule qui \u00e9tait de belle taille, on peut aussi utiliser du filet mais vous serez priv\u00e9 de la d\u00e9licieuse couenne croustillante.<\/p>\n\n<div Vous en obtiendrez plus si vous utilisez le jambon, mais l\u2019\u00e9paule en a aussi un peu. En Equateur ,pour obtenir une couenne croustillante certains l\u2019asperge d\u2019eau froide les derni\u00e8res minutes de cuisson. D\u2019autres passent la couenne au chalumeau, jusqu\u2019a \u00e0 la noircir et apr\u00e8s, avec un couteau bien aiguis\u00e9, ils raclent cette croute pour laisser appara\u00eetre la couenne dor\u00e9e et croustillante. Vous pouvez aussi allumer le grill de votre four les derni\u00e8res minutes pour en faire autant. Une autre fa\u00e7on d\u2019avoir cette couenne bien croustillante est de retirer la couenne, enlever la couche de graisse et la dorer au grill ou au chalumeau.<br \/>L\u2019hornado \u00e9quatorien peut se servir avec une vari\u00e9t\u00e9 de plats en accompagnement. Quelques un des plus populaires \u00e9tant llapingachos ou tourte de pommes de terre, \u00ab mote \u00bb ou ma\u00efs bouilli et pel\u00e9, du plantain frit, des tranches d\u2019avocats, une sauce tomates et oignons, le \u00ab curtido \u00bb, une sauce vinaigrette \u00ab agrio \u00bb. Elles cuisent dans le jus et deviennent les meilleures pommes de terres en chemise que vous n\u2019aurez jamais gout\u00e9es.
