Si vous ne les connaissez pas, les humitas sont des galettes de ma\u00efs et fromage frais, entour\u00e9es des feuilles de l\u2019\u00e9pi et cuites \u00e0 la vapeur. On peut les comparer \u00e0 des tamales de ma\u00efs frais, mais attention !ne le dites pas devant un Equatorien, cela pourrait d\u00e9clencher une apoplexie ! Mais, hormis \u00e0 la fin de l\u2019\u00e9t\u00e9, il n\u2019est pas \u00e9vident de trouver du ma\u00efs frais, mais pour ceux qui, comme moi, sont accros au go\u00fbt des humitas, voici une solution.<\/p>\n<p>\u00a0<\/p>\n<p>J\u2019ai d\u00e9cid\u00e9 de faire un g\u00e2teau de humita au fromage. En utilisant les m\u00eames ingr\u00e9dients que ceux contenus dans la recette de ma m\u00e8re. Mais au lieu de les entourer de feuilles d`\u00e9pis de ma\u00efs et de les mettre au cuit vapeur, j\u2019ai mis le m\u00e9lange dans un plat allant au four avec une couche de fromage au milieu. M\u00eame pendant les mois d\u2019\u00e9t\u00e9, quand je fais des humitas si je me retrouve sans feuilles d\u2019\u00e9pis, j\u2019enfourne le surplus.<\/p>\n<p>\u00a0<\/p>\n<p>Je vais vous avouer une chose, quand je suis paresseuse ou \u00ab carishina \u00bb comme on dit chez moi, au lieu de me lancer dans tout le processus d\u2019\u00e9laboration des humitas, j\u2019ai recours \u00e0 cette m\u00e9thode. Ce g\u00e2teau de humita peut \u00eatre fait avec du ma\u00efs frais qui peut, peut \u00eatre se trouver (mais sans les feuilles des \u00e9pis), mais aussi avec du ma\u00efs congel\u00e9.<\/p>\n\n<div La version traditionnelle Chilienne a de la viande et le m\u00e9lange de ma\u00efs est cuisin\u00e9 d\u2019avance avant d\u2019\u00eatre enfourn\u00e9. Pendant mon s\u00e9jour en Equateur, cet \u00e9t\u00e9, nous avons fabriqu\u00e9 des humitas chez ma m\u00e8re et j\u2019ai rencontr\u00e9 une Australienne tr\u00e8s sympa qui s\u2019est jointe \u00e0 nous pour la fabrication des humitas. Elle avait fait un g\u00e2teau de ma\u00efs Chilien et ador\u00e9e la sauce de tomates et oignons qui l\u2019accompagnait appel\u00e9e \u00ab pebre \u00bb.<\/p>\n<p>\u00a0<\/p>\n<p>Co\u00efncidence, nous avions fait ce jour l\u00e0 un \u00ab curtido de tomates et oignons \u00bb qui se ressemble sauf qu\u2019il n\u2019y a pas les piments et l\u2019ail, et cette sauce se mari\u00e2t parfaitement avec les humitas.
