Nous nous rendions dans un village voisin pour leur f\u00eate annuelle et tout le monde ne parlait que de ce village qui avait le meilleur rago\u00fbt de ch\u00e8vre de la r\u00e9gion et qui le pr\u00e9parait seulement pendant la f\u00eate du village. Il existe plusieurs versions du rago\u00fbt de ch\u00e8vre, et si l\u2019essentiel des ingr\u00e9dients est souvent le m\u00eame, c\u2019est la boisson avec laquelle il est pr\u00e9par\u00e9 qui va tout changer.<\/p>\n<p>&nbsp;<\/p>\n<p>Je l\u2019ai d\u00e9j\u00e0 cuisin\u00e9 avec de la chicha (une boisson des Andes \u00e0 base de ma\u00efs ferment\u00e9), de la bi\u00e8re (ce qui est plus commun car beaucoup plus facile \u00e0 trouver que la chicha) mais aussi avec du jus de fruit. J\u2019ai utilis\u00e9 un fruit appel\u00e9 narangille (appel\u00e9 \u00ab lulo \u00bb en Colombie) qui est un fruit acidul\u00e9 que l\u2019on trouve en \u00c9quateur et en Colombie.<\/p>\n<p>&nbsp;<\/p>\n<p>Le go\u00fbt du rago\u00fbt de ch\u00e8vre varie selon la boisson utilis\u00e9e, pour moi ils sont tous bons mais certaines personnes ont des id\u00e9es tr\u00e8s arr\u00eat\u00e9es sur la fa\u00e7on de pr\u00e9parer leur rago\u00fbt de viande de ch\u00e8vre. La boisson la plus traditionnelle est la chicha. J\u2019avais pr\u00e9vu de pr\u00e9parer cette recette \u00e0 partir de bi\u00e8re ou de jus de narangille car je savais qu\u2019il serait facile de trouver de la pulpe de narangille ou m\u00eame des fruits au rayon surgel\u00e9. Mais \u00e0 ma grande surprise, j\u2019ai trouv\u00e9 de la chicha dans un magasin sp\u00e9cialis\u00e9 en produits d\u2019Am\u00e9rique latine. Elle provenait du P\u00e9rou, donc elle \u00e9tait l\u00e9g\u00e8rement diff\u00e9rente de la chicha \u00e9quatorienne, mais assez proche quand m\u00eame. Donc pour cette fois, je pr\u00e9pare cette viande de ch\u00e8vre avec de la chicha (la prochaine fois je le ferai avec de la bi\u00e8re et partagerai la recette).<\/p>\n\n<div Il s\u2019agit d\u2019un sucre brun similaire \u00e0 la cassonade qui est vendu sous forme d\u2019un pav\u00e9 (mais j\u2019en ai d\u00e9j\u00e0 vu sous forme conique). La panela est fabriqu\u00e9e \u00e0 partir de sucre de canne. En \u00c9quateur, il est fabriqu\u00e9 dans des \u00ab trapiches \u00bb, une sorte de moulin traditionnel. Nous en avions un pas tr\u00e8s loin de notre ferme et nous avions un petit champ de cannes \u00e0 sucre. Quand les cannes sont pr\u00eates \u00e0 \u00eatre cueillies, elles sont coup\u00e9es \u00e0 la machette (la base est laiss\u00e9e et elle repoussera), et le sucre est charg\u00e9 sur des \u00e2nes (qui sont \u00e9quip\u00e9s d\u2019une structure en bois sp\u00e9cialement con\u00e7ue pour transporter les cannes \u00e0 sucre). Ensuite les cannes \u00e0 sucre sont emmen\u00e9es \u00e0 la trapiche la plus proche o\u00f9 elles seront press\u00e9es pour extraire leur jus. Ce jus, appel\u00e9 \u00ab guarapo \u00bb ou \u00ab v\u00e9sou \u00bb (et qui est d\u00e9licieux m\u00e9lang\u00e9 avec du jus d\u2019orange am\u00e8res), est alors cuit dans de grands r\u00e9cipients rectangulaires en m\u00e9tal (qui sont chauff\u00e9s par des flammes en dessous), tout en \u00e9tant m\u00e9lang\u00e9 \u00e0 l\u2019aide d\u2019\u00e9normes cuill\u00e8res en bois (elles ressemblent presque \u00e0 des pagaies).<\/p>\n<p>&nbsp;<\/p>\n<p>Apr\u00e8s plusieurs \u00e9tapes de cuisson, le sirop tr\u00e8s \u00e9pais obtenu est vers\u00e9 dans de petits moules en bois en forme de pav\u00e9. Quand la panela s\u00e8che, elle se durcit et les moules sont enlev\u00e9s. C\u2019est un processus tr\u00e8s int\u00e9ressant et la seule \u00e9tape de la trapiche dure un jour entier. \u00c9videmment, les enfants peuvent go\u00fbter le guarapo et le sirop de canne. En \u00c9quateur on utilise la panela de la m\u00eame mani\u00e8re que la plupart des gens utilisent le sucre blanc : pour sucrer le caf\u00e9, le th\u00e9, les jus, pour cuisiner, faire de la confiture ou encore conserver les fruits. Le panela est conserv\u00e9e sous leur forme de pav\u00e9 dur jusqu\u2019\u00e0 son utilisation o\u00f9 on la fait fondre avec de l\u2019eau pour produire un sirop appel\u00e9 \u00ab miel de panela \u00bb qui est utilis\u00e9 pour sucrer. Le pav\u00e9 de panela peut aussi \u00eatre r\u00e2p\u00e9. On peut trouver de la panela dans la plupart des magasins sp\u00e9cialis\u00e9s en produits d\u2019Am\u00e9rique latine.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"https:\/\/www.laylita.com\/recipes\/wp-content\/uploads\/2008\/02\/Panela%20or%20piloncillo.JPG\" alt=\"La panella\" width=\"320\" height=\"213\"><br>Assez parl\u00e9 de la panela ! Une autre particularit\u00e9 du rago\u00fbt de ch\u00e8vre et de la viande de ch\u00e8vre en g\u00e9n\u00e9ral, est que quand il est pr\u00e9par\u00e9 correctement, il ne doit pas avoir le go\u00fbt de ch\u00e8vre (celui que l\u2019on retrouve dans le fromage de ch\u00e8vre). La viande doit aussi \u00eatre tr\u00e8s tendre, c\u2019est pourquoi elle sera brais\u00e9e. Le rago\u00fbt de ch\u00e8vre est servi avec du riz jaune (du riz cuit avec un peu de roucou pour lui donner sa couleur jaune), des bananes plantain m\u00fbres frites et des tranches
