Il est difficile de traduire le terme \u00ab humitas \u00bb, bien s\u00fbr si vous en avez eu une entre les mains, vous voyez ce que c\u2018est, mais les d\u00e9crire \u00e0 quelqu&rsquo;un qui n\u2019en a jamais vues est assez compliqu\u00e9. On peut les comparer \u00e0 une galette de ma\u00efs frais au fromage comme un tamale mexicain. Mais expliquer les diff\u00e9rences entre un tamale mexicain et un autre d\u2019origine \u00e9quadorienne, cela est encore toute une histoire ! Les \u00ab Humitas \u00bb sont faites de ma\u00efs frais moulu avec d\u2019autres ingr\u00e9dients. Ce m\u00e9lange s\u2019utilisant pour remplir les feuilles des \u00e9pis et cuire \u00e0 la vapeur. Les humitas sont un met tr\u00e8s populaire dans la Sierra et les r\u00e9gions montagneuses, particuli\u00e8rement dans les villes de Loja, Cuenca ou Quito, o\u00f9 elles sont consomm\u00e9es pour le petit d\u00e9jeuner ou avec le caf\u00e9 de l\u2019apr\u00e8s midi.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1424\" src=\"https:\/\/www.laylita.com\/recettes\/wp-content\/uploads\/2014\/10\/pr\u00e9paration-gallette-humitas.jpg\" alt=\"La pr\u00e9paration des humitas, gallettes de ma\u00efs cuit vapeur.\" width=\"456\" height=\"640\" \/><br \/>Quand j\u2019\u00e9tais enfant, les humitas n\u2019\u00e9taient pas seulement une gourmandise bonne \u00e0 savourer, j\u2019adorais tout le processus de la pr\u00e9paration. Tout cela a commenc\u00e9 par la r\u00e9colte du ma\u00efs qui provenait du petit potager de notre ferme ou de celui qu\u2019on achetait aux fermes voisines. La r\u00e9colte \u00e9tait un moment de plaisir et d\u2019amusement pour les enfants, bien sur, parfois nous nous trompions en les choisissant trop verts. Je me rappelle aussi que les plants nous semblaient tr\u00e8s hauts et quelle ne fut pas ma surprise, arrivant au Texas, de les trouver si petits ! Mais je n\u2019avais plus mes yeux d\u2019enfant, h\u00e9las !<\/p>\n<p>Apr\u00e8s l\u2019avoir cueillit on pouvait l\u2019amener \u00e0 la maison pour enlever les feuilles des \u00e9pis, cela aussi fut un moment de bonheur. A cette \u00e9poque on ne faisait pas les humanitas comme de nos jours, en utilisant moins de 10 \u00e9pis. Au lieu de cela on avait les \u00ab costales \u00bb, de grands sacs de ma\u00efs. On \u00e9tait tous assis dehors entour\u00e9s d\u2019\u00e9pis, on en avait des tonnes ! Les femmes des environs se r\u00e9unissaient pour \u00e9cosser le ma\u00efs et c\u2019\u00e9tait le moment de raconter des histoires ou de rappeler des l\u00e9gendes. La plupart \u00e9taient effrayantes et le personnage principal \u00e9tait le diable lui m\u00eame. Il avait d\u2019ailleurs l\u2019habitude de se cacher dans \u00ab l\u2019higueron \u00bb, de grands arbres plant\u00e9s par ci, par l\u00e0 dans la vall\u00e9e. La nuit nous \u00e9tions convaincus qu\u2019il y en avait un dans l\u2019arbre de notre ferme, \u00e0 la o\u00f9 nous avions construit notre cabane, et il n\u2019\u00e9tait bien s\u00fbr plus question d\u2019y aller le soir apr\u00e8s toutes ces histoires! Il y avait un higueron au coin de la route menant \u00e0 notre ferme, et c\u2019est la qu\u2019une personne disait avoir vu quelqu\u2019un qui ne pouvait \u00eatre que le diable en personne ! Bref, je pourrais vous raconter pendant des heures contes et l\u00e9gendes parlant du malin. Parfois il \u00e9tait d\u00e9crit comme une cr\u00e9ature horrible et d\u2019autres fois il prenait l\u2019allure d\u2019un homme extr\u00eamement charmeur, ou \u00e0 d\u2019autres moments encore, il se faisait passer pour des personnages effrayants tels que des sorci\u00e8res, des veuves mal\u00e9fiques ou un pr\u00eatre sans t\u00eate etc.<\/p>\n<p class=\"MsoNormal\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-2987 size-full\" title=\"Les humitas emball\u00e9s dans les feuilles de ma\u00efs\" src=\"https:\/\/www.laylita.com\/recipes\/wp-content\/uploads\/2008\/09\/Humitas-recipe.jpg\" alt=\"Les humitas emball\u00e9s dans les feuilles de ma\u00efs\" width=\"457\" height=\"640\" \/><\/p>\n<p>Apr\u00e8s avoir \u00e9coss\u00e9 les grains de ma\u00efs, si on ne poss\u00e8de pas de cuit vapeur, on peut prendre les coeurs d\u2019 \u00e9pis et les utiliser comme tel. Les grains de ma\u00efs sont ensuite moulus ; ma m\u00e8re avait une de ces vieilles meules manuelles pour moudre le ma\u00efs mais de nos jours tout cela va dans un mixer avec les autres ingr\u00e9dients. La majorit\u00e9 des humitas ont du fromage dans leurs recettes, ou dans le m\u00e9lange ou en couche entre les cuill\u00e9r\u00e9es de m\u00e9lange. Certains n\u2019en mettent pas, sacril\u00e8ge ! Jamais ma m\u00e8re n\u2019aurait permis cela. Au contraire elle \u00e9tait tr\u00e8s g\u00e9n\u00e9reuse avec le fromage qu\u2019elle ajoutait au m\u00e9lange et le mettait au milieu de l\u2019humita. Le fromage qu\u2019on utilise s\u2019appelle quesillo, un fromage frais qui fond parfaitement. Ici j\u2019ai trouv\u00e9 le fromage fermier frais excellent m\u00eame si un peu cher, mais la mozzarella ordinaire s\u2019adapte tr\u00e8s bien aussi, et je l\u2019utilise dans les recettes n\u00e9cessitant du quesillo. Le type de ma\u00efs est aussi tr\u00e8s diff\u00e9rent en Ecuador, plus sec et moins doux qu\u2019aux USA et peut \u00eatre qu\u2019en Europe, o\u00f9 il est bien plus sucr\u00e9 et humide. La premi\u00e8re fois que j\u2019ai fait des humitas aux USA je n\u2019\u00e9tais pas au courant de cette subtilit\u00e9, et j\u2019ai essay\u00e9 de les faire telles que je me rappelais. Elles \u00e9taient trop sucr\u00e9es et gluantes. Maintenant j\u2019\u00e9vite de mettre du sucre et je r\u00e9duis les quantit\u00e9s de liquides (cr\u00e8me, lait ou beurre) et j\u2019augmente la quantit\u00e9 de ma\u00efs moulu pour une consistance plus ferme. J\u2019ai remarqu\u00e9 que si j\u2019utilise du ma\u00efs un peu plus vieux et contenant donc moins d\u2019eau, le m\u00e9lange est plus \u00e9pais, donc les quantit\u00e9s de ma\u00efs moulu d\u00e9pendent de sa fraicheur.<\/p>\n<p>Comme tant d\u2019autres recettes typiques venant d\u2019Equateur, les recettes des humitas varient d\u2019une famille \u00e0 l\u2019autre. La recette de ma m\u00e8re (la meilleure cela va sans dire) est une des plus simples \u00e0 faire. Moudre le ma\u00efs, m\u00e9langer les autres ingr\u00e9dients, enrouler et passer \u00e0 la vapeur. Les m\u00e8res de quelques une de mes amies avaient des recettes d\u2019humitas on pourrait dire \u00ab plus compliqu\u00e9es \u00bb, cela consistait \u00e0 s\u00e9parer les jaunes d\u2019\u0153ufs des blancs, \u00e0 battre les blancs en neige ferme et pour moi, \u00e0 cette \u00e9poque avoir un batteur \u00e9lectrique me paraissait \u00eatre le summum de la modernit\u00e9. J\u2019ai donc convaincu ma m\u00e8re d\u2019en acheter un, je devais alors avoir 17 ans. On pouvait aussi ajouter de la levure chimique afin d\u2019all\u00e9ger les humitas ; je les ai faites des deux mani\u00e8res et je dois dire que je n\u2019ai pas not\u00e9 de diff\u00e9rence notable que ce soit au niveau du go\u00fbt ou de la consistance. Mon cu\u00f1ado (beau fr\u00e8re) Matt \u00e9tait en visite, et lui aussi ne constat\u00e2t de diff\u00e9rence particuli\u00e8re. En fait, Matt aimait les deux fabrications de humitas car ni l\u2019une ni l\u2019autre n\u2019\u00e9taient pas trop s\u00e8ches ou \u00e9tait il tr\u00e8s gourmand ? En Equateur on a parfois tendance \u00e0 les faires trop s\u00e8ches. C\u2019est surtout le cas dans les restaurants ou les caf\u00e9s, \u00e0 la maison ou chez les amies nous veillons \u00e0 ce d\u00e9tail. Je vous fais part des deux recettes, faites les selon votre choix, votre go\u00fbt et surtout votre pr\u00e9f\u00e9rence, car m\u00eame si celles ci sont excellentes avec du fromage vous pouvez aussi les faire nature. Les produits laitiers comme les \u0153ufs ne sont pas indispensables non plus, c\u2019est vraiment en fonction du go\u00fbt de chacun !<\/p>\n<h1>Technique de pr\u00e9paration des humitas : Comment farcir et fermer les feuilles des \u00e9pis de ma\u00efs<\/h1>\n<p>Le proc\u00e9d\u00e9 complet pour remplir les feuilles d\u2019\u00e9pis de ma\u00efs avec le m\u00e9lange peut s\u2019av\u00e9rer un peu d\u00e9licat, c\u2019est juste une question de coup de main. Ceci d\u00e9pend aussi de la fa\u00e7on dont les personnes ont appris \u00e0 le faire. J\u2019aurais aim\u00e9 faire une petite vid\u00e9o de cette technique, mais j\u2019esp\u00e8re que les photos seront suffisamment explicites car c\u2019est le genre de chose qu\u2019on apprend plus vite en le voyant faire par une autre personne qu\u2019en le lisant. Mais essayons !<\/p>\n<p>Utilisez les feuilles d\u2019\u00e9pis de ma\u00efs comme emballage en gardant les feuilles les plus grandes, les plus petites seront utilis\u00e9es comme liens pour maintenir les paquets bien ferm\u00e9s. Plus grandes sont les feuilles mieux c\u2019est mais comme viendra un moment o\u00f9 il ne vous restera plus que des petites, dans ce cas, moi je mets deux feuilles l\u2019une sur l\u2019autre en quinconce pour r\u00e9aliser un emballage le plus large possible dans sa partie centrale. Ensuite vous y d\u00e9poserez une cuill\u00e8re \u00e0 soupe de fromage, refermerez partiellement l\u2019enveloppe en la repliant sur elle m\u00eame \u00e0 la base et terminerez le remplissage avec le m\u00e9lange de ma\u00efs. Pour fermer l\u2019enveloppe compl\u00e8tement, pliez la partie o\u00f9 vous avez mis le m\u00e9lange et en suite plier l\u2019autre cot\u00e9. Il se peut qu\u2019une extr\u00e9mit\u00e9 soit mal ferm\u00e9e, ce n\u2019est pas grave et surtout cela n\u2019aura aucune incidence sur le r\u00e9sultat final. Mais si vous pr\u00e9f\u00e9rez que tout soit bien ferm\u00e9, faites un paquet avec une seule feuille et utilisez une deuxi\u00e8me pour fermer les trous. Une chose essentielle avec les humitas c\u2019est de les d\u00e9guster ave du aji, ou sauce piquante, de pr\u00e9f\u00e9rence avec la tree tomato hot sauce , ou sauce piquante de tomate d\u2019arbre.<br \/>Les humitas peuvent \u00eatre r\u00e9chauff\u00e9es au microonde. Vous pouvez aussi sortir une humita froide de son emballage et la frire \u00e0 temp\u00e9rature moyenne au beurre ou \u00e0 l\u2019huile deux minutes de chaque cot\u00e9 jusqu\u2019\u00e0 ce
