L&rsquo;ensemble du processus de cuisson du pernil est proche de Hornado de chancho, cependant la marinade et les \u00e9pices sont diff\u00e9rentes, le pernil contient en plus des clous de girofle et de la cannelle, ce qui donne \u00e0 la viande une saveur tr\u00e8s particuli\u00e8re, aussi, tandis que la viande de Hornado doit \u00eatre tr\u00e8s juteuse, la viande de pernil doit quant \u00e0 elle \u00eatre tr\u00e8s s\u00e8che, mais les deux doivent rester extr\u00eamement tendres. Aussi, plusieurs pays d&rsquo;Am\u00e9rique Latine ont des versions diff\u00e9rentes de pernil, qui sont tr\u00e8s diff\u00e9rentes du pernil \u00e9quatorien; par exemple, ce qui est connu comme
