Ma m\u00e8re pr\u00e9parait le mote en utilisant du ma\u00efs sec complet, elle avait cette \u00e9norme casserole qu\u2019elle mettait sur un po\u00eale \u00e0 bois dans la petite cabane (qu\u2019elle appelait sa fabrica ou usine) \u00e0 c\u00f4t\u00e9 de notre maison, le processus de \u00ab\u00a0nixtamalisation\u00a0\u00bb de ma\u00efs sec prenait toute une journ\u00e9e, une fois le ma\u00efs pel\u00e9 elle le bouillait jusqu&rsquo;\u00e0 ce qu&rsquo;il devienne gonfl\u00e9 et mou. La vari\u00e9t\u00e9 de ma\u00efs qui pousse dans les Andes &#8211; Il existe en fait plusieurs vari\u00e9t\u00e9s de ma\u00efs, mais le type le plus commun est diff\u00e9rent de celui que l\u2019on trouve aux \u00c9tats-Unis (et en Europe), les grains sont plus gros, plus secs et moins sucr\u00e9s \u2013 j\u2019ai \u00e9t\u00e9 tellement \u00e9tonn\u00e9e en voyant comment \u00e9tait le ma\u00efs sucr\u00e9 am\u00e9ricain la premi\u00e8re fois que je l&rsquo;ai essay\u00e9, j&rsquo;\u00e9tais persuad\u00e9e que l\u2019on y avait rajout\u00e9 du sucre, et bien que j&rsquo;aie grandi en appr\u00e9ciant le ma\u00efs sucr\u00e9, \u00e7a reste un challenge d&rsquo;adapter certains plats \u00e9quatoriens \u00e0 base de ma\u00efs en utilisant le ma\u00efs local, mais cela fonctionne quand m\u00eame.<\/p>\n<p><!--more--><\/p>\n<p class=\"MsoNormal\">\u00a0<img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-1075\" title=\"Comment cuire le mote ou hominy\" src=\"https:\/\/www.laylita.com\/recettes\/wp-content\/uploads\/2014\/09\/Comment-cuire-le-mote-ou-hominy.jpg\" alt=\"Comment cuire le mote ou hominy\" width=\"640\" height=\"962\" srcset=\"https:\/\/www.laylita.com\/recettes\/wp-content\/uploads\/2014\/09\/Comment-cuire-le-mote-ou-hominy.jpg 681w, https:\/\/www.laylita.com\/recettes\/wp-content\/uploads\/2014\/09\/Comment-cuire-le-mote-ou-hominy-425x640.jpg 425w\" sizes=\"auto, (max-width: 640px) 100vw, 640px\" \/><\/p>\n<p>Il ya 10 ans environ, lorsque je me suis install\u00e9e aux \u00c9tats-Unis, c\u2019\u00e9tait tr\u00e8s difficile de trouver du mote ou hominy et le seul type que j&rsquo;ai pu trouver \u00e9tait en conserve et pr\u00e9-cuit, ce qui \u00e9tait tr\u00e8s pratique puisque je n\u2019avais qu\u2019\u00e0 l\u2019\u00e9goutter, le rincer et l&rsquo;utiliser, cependant, le go\u00fbt de mote fra\u00eechement pr\u00e9par\u00e9 manquait. J&rsquo;ai r\u00e9cemment appris qu&rsquo;il \u00e9tait possible de trouver du mote s\u00e9ch\u00e9 &#8211; qui a \u00e9t\u00e9 d\u00e9j\u00e0 \u00ab\u00a0nixtamalis\u00e9\u00a0\u00bb &#8211; et pr\u00eat \u00e0 faire bouillir. Ce ma\u00efs doit tremper toute une nuit et prend quelques heures \u00e0 cuire, mais le r\u00e9sultat en vaut vraiment la peine! Apr\u00e8s l\u2019avoir mang\u00e9 de cette fa\u00e7on, il est tr\u00e8s difficile de revenir \u00e0 la version en bo\u00eete &#8211; mais je garde toujours une conserve de hominy sous la main juste au cas o\u00f9 j&rsquo;ai une envie de derni\u00e8re minute ou que j\u2019en aie besoin de suite. Vous pouvez trouver du ma\u00efs sec nixtamalis\u00e9 dans quelques \u00e9piceries latino, il est appel\u00e9 Maiz Mote Pelado et est vendu dans des paquets de 500g &#8211; le plus souvent \u00e0 c\u00f4t\u00e9 des haricots \/ petits pois secs \u2013 trempez-le toute une nuit et faites-le bouillir (tel que vous le feriez avec des haricots secs).<\/p>\n<p>Le hominy est un excellent plat d&rsquo;accompagnement, en \u00c9quateur, il est souvent servi en accompagnement de beaucoup de plats \u00e0 base de viande; il suffit d&rsquo;ajouter un peu de sel (si n\u00e9cessaire) et c\u2019est pr\u00eat. Si vous voulez donner au hominy un peu plus de saveur, vous pouvez \u00e9galement pr\u00e9parer un refrito rapide (oignons, ail et autres \u00e9pices saut\u00e9es dans de l&rsquo;huile ou dans du beurre) et le m\u00e9langer au hominy. Le mote pillo est un plat classique des hauts plateaux andins, pr\u00e9par\u00e9 \u00e0 base de hominy et d\u2019\u0153ufs, c\u2019est l&rsquo;un des meilleurs plats servis au petit d\u00e9jeuner.
