La fa\u00e7on \u00e9quatorienne dont on cuit le riz est un peu diff\u00e9rente et plus pr\u00e9cise; le riz doit \u00eatre cuit \u00e0 la perfection, ni trop dur, ni trop mou, ferme et granuleux.<\/p>\n<p>Selon l&rsquo;endroit o\u00f9 vous vivez et le riz que vous achetez vous pourriez avoir besoin de nettoyer le riz pour enlever les mauvaises graines ou les petits cailloux, et dans ce cas, vous voudrez probablement bien le laver et le rincer, aussi, si vous vivez en altitude vous aurez certainement besoin d&rsquo;ajouter plus d&rsquo;eau et le laisser cuire un peu plus longtemps, je vis actuellement presque au niveau de la mer donc j&rsquo;utilise une quantit\u00e9 d&rsquo;eau minimale, mais quand je vivais \u00e0 Loja (2100m d\u2019altitude) j\u2019utilisais environ le double de la quantit\u00e9 d&rsquo;eau pour le riz.<!--more--><\/p>\n<p>Beaucoup de plats principaux \u00e9quatoriens contiennent du riz amarillo ou riz jaune comme plat d&rsquo;accompagnement, ils sont cuits de la m\u00eame fa\u00e7on qu\u2019expliqu\u00e9 ci-dessous, il suffit d&rsquo;ajouter du rocou en poudre ou des graines de rocou lors de la cuisson des oignons. Pour le riz \u00e0 la fa\u00e7on \u00c9quatorienne vous pouvez ajouter du paprika ou du safran si vous n&rsquo;avez pas rocou de disponible.<\/p>\n<div id=\"recipe\"><\/div><div
