No se dejen confundir por el nombre, no es un platillo de carne frita. La carne de chancho o cerdo se cocina en abundante agua y jugo de naranja con comino, ajo, cebolla, sal y pimienta hasta el agua se haya consumido completada. Luego la carne se empieza a dorar en su propia grasa. <\/p>\n\n\n\n<p>Yo no le agrego grasa adicional a la fritada para dorar la carne, pero algunos lugares\/restaurantes si le suelen poner manteca adicional. Personalmente me parece que con la grasa misma de la carne es suficiente para dorar la carne. A esa deliciosa combinaci\u00f3n de grasa con las especias\/condimentos, que queda al final, la llamamos mapahuira.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/www.laylita.com\/recetas\/wp-content\/uploads\/Fritada-ecuatoriana-receta.jpg\" alt=\"Fritada de chancho o fritada ecuatoriana\"\/><\/figure>\n\n\n\n<p>Los acompa\u00f1antes para la fritada var\u00edan de un lugar y de una ciudad a otra. En Loja se suele acompa\u00f1ar con yuca sancochadas (hervidas), mote, pl\u00e1tanos maduros fritos, curtido de cebolla y tomate, y un buen aji. Otros platillos acompa\u00f1antes que se pueden servir son arroz, llapingachos o tortillas de papa, papas sancochadas, aguacate y ensaladas variadas.
