El ceviche de pescado de Ram\u00f3n es parecido a la <a title=\"Ceviche de pescado de Mafi\" href=\"https:\/\/www.laylita.com\/recetas\/2008\/02\/18\/ceviche-de-pescado-ecuatoriano\/\" target=\"_blank\" rel=\"noopener noreferrer\">receta del ceviche ecuatoriano<\/a> de mi amiga Mafi, una de las diferencias es que \u00e9l le agrega aj\u00edes o chiles picantes (cortados) y dientes de ajo para infusionar un poco de sabor picante al ceviche \u2013 en realidad no hacen que el ceviche sea picoso, solo le da m\u00e1s sabor al pescado.<\/p>\n\n\n\n<p>Los aj\u00edes y el ajo se sacan antes de mezclar el pescado marinado o \u201ccocido\u201d por el lim\u00f3n con el resto de los ingredientes. El ceviche se puede preparar con una variedad de pescados y mariscos, pero tambi\u00e9n con otros ingredientes <a title=\"Ceviche de chochos\" href=\"https:\/\/www.laylita.com\/recetas\/2012\/06\/03\/ceviche-vegetariano-de-chochos\/\" target=\"_blank\" rel=\"noopener noreferrer\">(chochos o frijoles lupini<\/a>, champi\u00f1ones, palmito, etc), pero cuando a la mayor\u00eda de personas se le menciona el ceviche, lo primero que se les pasa por la mente es el ceviche de pescado porque es el m\u00e1s popular.<\/p>\n\n\n\n<p>El ceviche de pescado es en parte el m\u00e1s conocido porque el ingrediente principal (pescado) se \u201ccocina\u201d en jugo de lim\u00f3n. Hay que aclarar que aunque el aspecto del pescado del ceviche parezca que fuese cocinado, no es lo mismo que si se cocinara usando el calor del fuego. Muchas veces depende de la calidad y frescura del marisco, mientras m\u00e1s delicado y fresco sea el marisco, hay m\u00e1s opciones de prepararlo y \u201ccocinarlo\u201d solo con el jugo de lim\u00f3n.<\/p>\n\n\n\n<p>Otros ceviches que se preparan con mariscos crudos son el <a title=\"Receta del ceviche de ostras\" href=\"https:\/\/www.laylita.com\/recetas\/2014\/04\/05\/ceviche-de-ostras-o-ceviche-de-ostiones\/\" target=\"_blank\" rel=\"noopener noreferrer\">ceviche de ostras u ostiones<\/a>, el ceviche de vieiras (conchas de abanico o scallops en ingl\u00e9s), y mi favorito el ceviche de conchas, que se prepara al instante con conchas negras o conchas prietas. Este ceviche de pescado se puede servir acompa\u00f1ado de chifles o chips de pl\u00e1tano verde, patacones o tostones, ma\u00edz tostado, canguil, y aj\u00ed picante al gusto.<\/p>\n\n\n<div
