Los mejores son los ceviches de carreta, suena un poco riesgoso para los que no est\u00e1n acostumbrados, pero he probado algunos de los mejores ceviches preparados por vendedores ambulantes en la playa.<\/p>\n\n\n\n<p>Mis preferidos, quiz\u00e1s porque son menos comunes fuera de Ecuador, son el ceviche de concha y el ceviche de ostras. Me encanta ver como preparan el ceviche delante de uno: el vendedor (o la vendedora) abre las ostras (hay unas gigantes), lo pone un plato con el jugo de la ostra y all\u00ed mismo lo pica en pedazos peque\u00f1os. Pero, lo bueno es all\u00ed usted puede pedir que le preparen el ceviche a su gusto con los aderezos que usted prefiere. Este ceviche es s\u00faper f\u00e1cil de preparar. Lo \u00fanico medio dif\u00edcil es el proceso de abrir las ostras, hay que tener cuidado de no lastimarse. El ceviche de ostras no requiere de mucho tiempo para marinarse, solamente se lo deja unos minutos para que los sabores se combinen.&nbsp;Es por esta raz\u00f3n que es muy importante usar ostras bien frescas y de excelente calidad.<\/p>\n\n\n\n<p>Las ostras en Ecuador son gigantes, solo se necesita de una o dos ostras para preparar un ceviche para una persona. Para esta receta use ostras grandes del Pacifico de EEUU y use tres ostras por persona, puede usar m\u00e1s si quiere servir el ceviche como plato principal. Suelo usar aceite de girasol o aceite de oliva ligero para los ceviches.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/www.laylita.com\/recetas\/wp-content\/uploads\/Ceviche-de-ostras-o-ceviche-de-ostion.jpg\" alt=\"Ceviche de ostras o ceviche de ostion\"\/><\/figure>\n\n\n\n<p>Algunos me han preguntado porque no uso aceite de oliva regular y es porque personalmente me parece que su sabor es muy fuerte para ciertos ceviches y domina demasiado. Esa es mi preferencia personal, pero si a usted le gusta con aceite de oliva regular entonces dese gusto. Si le gusta lo picante tambi\u00e9n le puede agregar aji a su gusto.<\/p>\n\n\n\n<p>Esta receta rinde porciones medianas para 2 personas o porciones peque\u00f1as para 4 personas (en copitas para probar).
