El cebiche, tambi\u00e9n es correcto escribir ceviche o seviche, t\u00edpicamente se prepara con pescado o marisco, el mismo que se curte con jugo de lim\u00f3n. La acidez del jugo de lim\u00f3n ayuda a \u201ccocinar\u201d al pescado. Hay que aclarar que no todos los tipos de cebiches se preparan con mariscos, y no todos los cebiches se preparan con mariscos crudos. Sin embargo, el cl\u00e1sico y tradicional cebiche de pescado peruano\u00a0si se prepara con pescado fresco crudo y es necesario curtirlo en jugo de lim\u00f3n. Por esto es muy importante usar pescado bien fresco y de alta calidad para preparar cebiche. El sabor del lim\u00f3n sutil es m\u00e1s parecido al key lime que a los limones mexicanos.<\/p>\n<p>En EEUU, donde hasta ahora no he podido encontrar lim\u00f3n sutil, cuando preparo un <span style=\"color: #0000ff;\"><a title=\"Receta del cebiche de camaron\" href=\"https:\/\/www.laylita.com\/recetas\/2008\/02\/07\/receta-ceviche-de-camaron\/\"><span style=\"color: #0000ff;\">ceviche o cebiche de camar\u00f3n<\/span><\/a><\/span>, donde se usa camarones ya cocidos, me gusta usar una mezcla de limones mexicanos (o de California) y key limes. Pero para el cebiche de pescado &#8211; especialmente para la versi\u00f3n peruana &#8211; prefiero usar s\u00f3lo key limes como el remplazo m\u00e1s cercano del lim\u00f3n sutil. Este aj\u00ed se puede encontrar congelado o enlatado en las tiendas de productos latinos en EEUU. Otra variedad de aj\u00ed que se usa en la cocina peruana es el aj\u00ed limo, que es muy similar (o casi lo mismo) al habanero. Personalmente me encanta lo picante y lo fresco, as\u00ed que use habaneros para esta receta, pero de acuerdo a su gusto puede usar aj\u00ed amarillo u otra variedad de aji menos picante si lo prefiere. Adem\u00e1s, para esta receta de cebiche, se retiran las venas y las semillas del aj\u00ed (que es la parte picante), se usa el aj\u00ed solamente para infundir su sabor en el pescado mientras este se curte en el jugo de lim\u00f3n. Algunas de las principales diferencias son que el cebiche que se prepara en Per\u00fa suele curtirse por menos tiempo en el jugo de lim\u00f3n- que en mi opini\u00f3n es parte de la influencia japonesa en la cocina peruana, y el uso de aj\u00ed picante en la preparaci\u00f3n del cebiche es algo m\u00e1s t\u00edpico del Per\u00fa. Tambi\u00e9n la forma de servir el cebiche o ceviche es diferente, el peruano no siempre se sirve con el jugo en el que se curti\u00f3 el pescado. Depende del lugar, en algunos lugares me lo han servido m\u00e1s como una ensalada, y en otros con un vaso del jugo o leche de tigre al lado para agregarlo al plato. Mientras que el ecuatoriano se sirve siempre con todo el juguito en el que se curti\u00f3.<\/p>\n<p>El cebiche peruano se acompa\u00f1a con hojas de lechuga, choclo o ma\u00edz sancochado, <span style=\"color: #0000ff;\"><a title=\"Receta del maiz cancha o maiz tostado\" href=\"https:\/\/www.laylita.com\/recetas\/2011\/12\/14\/maiz-tostado-receta\/\"><span style=\"color: #0000ff;\">ma\u00edz cancha tostado<\/span><\/a><\/span>, y camote o batata. El camote se sancocha y se sirve en rodajas, tambi\u00e9n se lo puede servir\u00a0chifles o chips de camote, tienen el mismo sabor dulce, pero su textura crocante combina mejor con el cebiche.
