Estos deliciosos secos ser suelen preparar con carne de res, gallina, chivo, borrego o cordero. La carne de borrego o cordero se cocina a fuego lento en una salsa preparada con chicha, cerveza, y\/o jugo de frutas. Tambi\u00e9n lleva verduras como cebolla, pimiento dulce, tomate; y una variedad de hierbas y especias como ajo, comino, canela, achiote, cilantro, perejil, or\u00e9gano, entre otros.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/www.laylita.com\/recetas\/wp-content\/uploads\/Seco-de-borrego-o-de-cordero.jpg\" alt=\"Seco de borrego o de cordero\"\/><\/figure>\n\n\n\n<p>Los ingredientes var\u00edan seg\u00fan el tipo de carne que se use, y claro tambi\u00e9n var\u00eda de una regi\u00f3n a otra; pero el objetivo final es el mismo: obtener un platillo de carne con una textura s\u00faper tierna dentro de una salsa llena de sabor. La preparaci\u00f3n de un seco es f\u00e1cil y sencilla, lo \u00fanico que se requiere es un poco de paciencia porque se pueden demorar unas cuantas horas cocin\u00e1ndose.<\/p>\n\n\n\n<p>El seco de borrego es muy parecido al <span style=\"color: #0000ff;\"><a title=\"Recea del seco de chivo\" rel=\"nofollow\" href=\"https:\/\/www.laylita.com\/recetas\/2008\/03\/07\/seco-de-chivo\/\"><span style=\"color: #0000ff;\">seco de chivo<\/span><\/a><\/span>, es m\u00e1s muchas veces lo que venden como seco de chivo en realidad lleva carne de borrego. Esto se debe a que la carne de borrego es m\u00e1s f\u00e1cil de encontrar que la carne de chivo, pero los que han probado ambos saben que hay una diferencia &#8211; aun si se usa la misma salsa y el mismo ali\u00f1o, ambas carnes tienen un sabor diferente que se infunde en el seco. <\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/www.laylita.com\/recetas\/wp-content\/uploads\/Seco-de-borrego-ecuatoriano.jpg\" alt=\"Seco de borrego ecuatoriano\"\/><\/figure>\n\n\n\n<p>La carne de chivo tiene un sabor m\u00e1s sutil, mientras que la de borrego tiene un sabor un poco m\u00e1s fuerte. Para explicarlo mejor tambi\u00e9n se puede pensar en el vino que se podr\u00eda servir para acompa\u00f1ar cada seco: al seco de chivo lo servir\u00eda con un Pinot Noir de Oregon o con un vino tinto de Burdeos; mientras que al seco de borrego lo acompa\u00f1ar\u00eda con un buen Cabernet de Washington o un Malbec argentino.<\/p>\n\n\n\n<p>Para este seco de borrego use una combinaci\u00f3n diferente de ingredientes y especias que de la suelo usar para preparar el seco de chivo. Para este guiso use una mezcla de cerveza, vino y jugo de naranjilla (lulo) \u2013 mientras que para el seco de chivo use chicha de jora y jugo de naranjilla. Tambi\u00e9n le puse un poco de perejil, or\u00e9gano y cilantro.<\/p>\n\n\n\n<p>En mi opini\u00f3n los secos quedan m\u00e1s ricos cuando se preparan con la carne que lleva huesos, ya que estos le dan m\u00e1s sabor al seco. Lamentablemente a mi esposo no le gustan muchos los huesos \u2013 a pesar de la carne queda tan tierna que se cae por si sola de los hueso. Y claro, para m\u00ed una de las mejores partes de un buen seco es chupar los huesitos al final. Pero, bueno, para mantenerlo contento a mi querido esposo, trato de usar una combinaci\u00f3n de pedazos de carne con hueso y otros sin hueso. Usted puede usar carne con o sin huesos de acuerdo a su gusto para esta receta. <\/p>\n\n\n\n<p>El seco de borrego se acompa\u00f1a con arroz, esencial para absorber la deliciosa salsa del seco, yucas
