La guatita es diferente, puedo comer varios platos y no me canso. La salsa de man\u00ed con papas lo hacen exquisito y el mondongo esta picado en pedacitos muy peque\u00f1os, acompa\u00f1ado con arroz, cebolla encurtidas, pl\u00e1tanos fritos, tomate, aguacate y aj\u00ed se convierte en una combinaci\u00f3n perfecta.<\/p>\n\n\n\n<p class=\"MsoNormal\">Tengo que mencionar que la guatita ecuatoriana tambi\u00e9n es muy conocida como un remedio perfecto para el chuchaqui o resaca, es muy frecuente encontrar a los restaurantes que se especializan en guatita completamente llenos muy temprano los s\u00e1bados y domingos. <\/p>\n\n\n\n<p class=\"MsoNormal\">Mi mam\u00e1, durante su fase de vegetariana, preparaba la guatita con carne vegetal o seitan. Era una de las pocas maneras que pod\u00eda lograr que comi\u00e9ramos la carne vegetal, y era sin duda por la salsa de man\u00ed y papas. Otra variaci\u00f3n que hice durante mis d\u00edas de estudiante era prepararlo con at\u00fan (porque se me antojo un plato de guatita y solo ten\u00eda papas, man\u00ed, leche y una lata de
