yapingachos, son un plato t\u00edpico ecuatoriano que consiste de tortillas de pur\u00e9 de papa rellenas con queso, que luego se cocinan en sart\u00e9n o en una parrilla plana hasta que queden para muchos otros platos t\u00edpicos ecuatorianos, tambi\u00e9n son excelentes para el desayuno o como entrada, pero al mismo tiempo un buen plato de llapingachos puede ser una comida completa cuando (max-width: 900px) 100vw, 900px\" \/><\/figure>\n\n\n\n<p class=\"MsoNormal\">En Ecuador se preparan los llapingachos con la papa chola, que es una variedad de papa con mucho almid\u00f3n, lo cual es muy importante para lograr la textura necesaria para que los llapingachos queden perfectos. Si vive en lugar donde no puede encontrar la papa chola trate de buscar un tipo de papa con mucho almid\u00f3n. <\/p>\n\n\n\n<p class=\"MsoNormal\">En EEUU las variedades que puedo recomendar son Russet y Idaho. Antes evitaba usar la variedad Yukon gold potato porque tiene poco almid\u00f3n y la textura es demasiado suave para llapingachos. Pero el sabor del Yukon gold es delicioso y se puede usar si se las cocina con delicadeza.  Si es su primera vez preparando llapingachos entonces empiece con las Russet. Es importante, ya sea que utilice una parrilla o una sart\u00e9n, que la superficie este muy caliente, y en vez de voltearlos varias veces d\u00e9jelos cocinar por el tiempo suficiente en cada lado y class=\"MsoNormal\">El tiempo exacto depende de la parilla o sart\u00e9n que est\u00e1 usando, al igual que cuando uno prepara los <em>pancakes<\/em> puede experimentar con el primero para descubrir
